🥗 Crispy Bread Patties with Fresh Salad and Yogurt Dip

Ingredients
- onions, red 1 pc.
- garlic cloves 1 pc.
- parsley, fresh 1 bunch
- lemons 1 pc.
- farmhouse mild bread 400 g
- butter 3 tbsp
- milk 300 ml
- salt pinch
- pepper, black ground pinch
- mixed leaf salad 1 pc.
- olive oil 2 tbsp
- mustard 1 tsp
- honey 1 tsp
- yogurt, plain 150 g
- mountain cheese 100 g
- eggs 2 pc.
Instructions
- 1. Halve the onion, peel it, and cut it into small cubes.
- 2. Peel the garlic and chop it finely.
- 3. Wash the parsley, dry it, and separate the leaves from the stems.
- 4. Finely chop the parsley leaves.
- 5. Wash the lemon and grate about one teaspoon of the zest.
- 6. Halve the lemon and squeeze out the juice.
- 7. Cut the stale bread into cubes.
- 8. Melt one tablespoon of butter in a pan over high heat.
- 9. Sauté the onion cubes and garlic for about two minutes.
- 10. Deglaze the pan with milk.
- 11. Season the mixture generously with salt and pepper.
- 12. Place the bread cubes into a bowl.
- 13. Pour the lukewarm milk over the bread cubes.
- 14. Let the bread cubes soak for about ten minutes.
- 15. Tear the salad into bite-sized pieces.
- 16. Wash the salad and let it drain well.
- 17. In a separate bowl, mix olive oil, mustard, honey, and lemon juice.
- 18. Season the dressing with salt and pepper.
- 19. Toss the salad with the dressing.
- 20. Place the yogurt into a bowl.
- 21. Mix the yogurt with some parsley.
- 22. Season the yogurt dip with salt, pepper, and lemon juice.
- 23. Squeeze the soaked bread lightly.
- 24. Pour off the excess milk.
- 25. Add the remaining parsley, grated cheese, lemon zest, and eggs to the bread mixture.
- 26. Knead everything well with your hands.
- 27. Let the dough rest briefly.
- 28. Shape flat patties about five centimeters in diameter from the mixture.
- 29. Heat two tablespoons of butter in the cleaned pan over high heat.
- 30. Fry the bread patties for four to five minutes on both sides until golden brown.
- 31. Serve the patties with the salad and yogurt dip.
