  1. 1. Crumble the yeast into a bowl.
  2. 2. Add the sugar and 250 ml of lukewarm water.
  3. 3. Stir the mixture until the yeast and sugar have dissolved.
  4. 4. Cover the bowl.
  5. 5. Let the yeast mixture rest for about 10 minutes.
  6. 6. Add both types of flour, 100 g of butter, and 1 teaspoon of salt to the yeast mixture.
  7. 7. Knead the ingredients for about 5 minutes until you have a smooth dough.
  8. 8. Cover the dough.
  9. 9. Let the dough rise in a warm place for about 1 hour.
  10. 10. Wait until the volume of the dough has noticeably increased.
  11. 11. Put quark, the remaining butter, an egg, and paprika powder into a separate bowl.
  12. 12. Beat the mixture with a hand mixer until creamy.
  13. 13. Season the filling lightly with pepper.
  14. 14. Stir 250 g of Emmental into the quark mixture.
  15. 15. Crumble the feta.
  16. 16. Gently fold the feta into the cheese filling.
  17. 17. Preheat the oven to 180 °C fan.
  18. 18. Knead the dough briefly again.
  19. 19. Sprinkle some flour on the work surface.
  20. 20. Roll the dough into a circle with a diameter of about 45 cm.
  21. 21. Grease a 26 cm springform pan.
  22. 22. Place the dough in the pan.
  23. 23. Make sure the dough edges hang over the rim of the pan.
  24. 24. Fill the Emmental-feta filling into the center.
  25. 25. Smooth out the filling.
  26. 26. Fold the dough edges over the filling.
  27. 27. Press the dough edges lightly.
  28. 28. Cover the bread.
  29. 29. Let the bread rise for another 15 minutes.
  30. 30. Sprinkle the remaining Emmental over the bread.
  31. 31. Bake the bread at 180 °C fan for about 50 to 60 minutes.
  32. 32. Take the bread out when it is crispy.
  33. 33. Let the bread rest while lukewarm or cooled.
  34. 34. Cut the bread into pieces.
  35. 35. Serve the bread and enjoy your meal!
