🍽️ Crispy Bread with Cheese Filling

Ingredients
- yeast, fresh 30 g
- sugar 1 tsp
- water 250 ml
- whole wheat flour 200 g
- wheat flour, type 405 330 g
- butter 125 g
- salt 1 tsp
- quark 40% fat in dry matter 250 g
- eggs 1 pc.
- paprika, sweet pinch
- pepper, black ground pinch
- Emmental cheese in a block 300 g
- feta 300 g
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Add the sugar and 250 ml of lukewarm water.
- 3. Stir the mixture until the yeast and sugar have dissolved.
- 4. Cover the bowl.
- 5. Let the yeast mixture rest for about 10 minutes.
- 6. Add both types of flour, 100 g of butter, and 1 teaspoon of salt to the yeast mixture.
- 7. Knead the ingredients for about 5 minutes until you have a smooth dough.
- 8. Cover the dough.
- 9. Let the dough rise in a warm place for about 1 hour.
- 10. Wait until the volume of the dough has noticeably increased.
- 11. Put quark, the remaining butter, an egg, and paprika powder into a separate bowl.
- 12. Beat the mixture with a hand mixer until creamy.
- 13. Season the filling lightly with pepper.
- 14. Stir 250 g of Emmental into the quark mixture.
- 15. Crumble the feta.
- 16. Gently fold the feta into the cheese filling.
- 17. Preheat the oven to 180 °C fan.
- 18. Knead the dough briefly again.
- 19. Sprinkle some flour on the work surface.
- 20. Roll the dough into a circle with a diameter of about 45 cm.
- 21. Grease a 26 cm springform pan.
- 22. Place the dough in the pan.
- 23. Make sure the dough edges hang over the rim of the pan.
- 24. Fill the Emmental-feta filling into the center.
- 25. Smooth out the filling.
- 26. Fold the dough edges over the filling.
- 27. Press the dough edges lightly.
- 28. Cover the bread.
- 29. Let the bread rise for another 15 minutes.
- 30. Sprinkle the remaining Emmental over the bread.
- 31. Bake the bread at 180 °C fan for about 50 to 60 minutes.
- 32. Take the bread out when it is crispy.
- 33. Let the bread rest while lukewarm or cooled.
- 34. Cut the bread into pieces.
- 35. Serve the bread and enjoy your meal!
