🍰 Blackberry Crumble Cake with Quark Filling

Ingredients
- butter 195 g
- sugar 295 g
- salt pinch
- wheat flour, type 405 265 g
- vanilla extract 2 tsp
- eggs 5 pcs.
- baking powder 1 tsp
- almonds, ground 200 g
- quark 40% fat in dry matter 500 g
- milk 100 ml
- cornstarch 50 g
- lemon paste 1 tsp
- blackberries, fresh 300 g
- powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 170 degrees Celsius top and bottom heat.
- 2. Line a baking tray with baking paper.
- 3. Place a springform pan on the prepared tray.
- 4. Take 70 grams of butter and knead it with 70 grams of sugar.
- 5. Add a pinch of salt and 140 grams of flour.
- 6. Knead the ingredients briefly until a crumbly dough forms.
- 7. Transfer the crumble dough to a plate.
- 8. Place the plate in the refrigerator to chill the dough.
- 9. Take the same mixing bowl without washing it first.
- 10. Mix 125 grams of soft butter with 125 grams of sugar.
- 11. Add a pinch of salt and one teaspoon of vanilla extract.
- 12. Stir in three eggs into the butter-sugar mixture.
- 13. Add 125 grams of flour, baking powder, and ground almonds.
- 14. Mix everything until a smooth dough forms.
- 15. Fill the almond dough into the springform pan.
- 16. Smooth the surface of the dough.
- 17. Take the same bowl again without washing it.
- 18. Mix the quark with the milk.
- 19. Add two eggs and cornstarch.
- 20. Stir in 100 grams of sugar.
- 21. Add one teaspoon of vanilla extract and lemon paste.
- 22. Mix the mixture until it is creamy.
- 23. Pour the quark filling over the almond dough.
- 24. Smooth the quark layer.
- 25. Distribute the blackberries evenly over the quark filling.
- 26. Take the cold crumble dough out of the refrigerator.
- 27. Crumble the streusel over the cake.
- 28. Bake the cake in the preheated oven at 170 degrees.
- 29. Baking time is about 50 to 60 minutes.
- 30. Take the cake out of the oven.
- 31. Let the cake cool down completely.
- 32. Carefully release the cake from the springform pan.
- 33. Cut the cake into even pieces.
- 34. Dust the pieces with powdered sugar before serving.
