Ingredients
- blackberries, fresh 1 kg
- almonds, ground 100 g
- sugar 350 g
- wheat flour, Type 405 500 g
- butter 100 g
- whipping cream 400 g
- vanilla sugar 4 tsp
- salt pinch
- eggs 4 pcs.
- baking powder 2 tsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Thoroughly wash the blackberries.
- 3. Remove any unripe or damaged berries.
- 4. Put the almonds, 150 grams of sugar, 100 grams of flour, and soft butter into a bowl.
- 5. Knead the ingredients into a crumble dough.
- 6. Store the crumble dough in the refrigerator.
- 7. Put the cream into a separate bowl.
- 8. Beat the cream with a hand mixer and the whisk attachment until semi-stiff.
- 9. Slowly stir in the remaining sugar, vanilla sugar, and salt into the cream.
- 10. Work the eggs into the mixture one by one until well combined.
- 11. Mix the remaining flour with the baking powder.
- 12. Stir the flour mixture into the cream briefly.
- 13. Spread the dough evenly onto a baking sheet lined with baking paper.
- 14. Distribute the blackberries evenly over the dough.
- 15. Bake the cake for about 10 minutes.
- 16. Take the cake out of the oven.
- 17. Distribute the crumble dough evenly over the cake.
- 18. Bake the cake at the same temperature for another 20 minutes.
- 19. Let the cake cool down completely.
- 20. Serve the cake.
