🍰 Juicy Blackberry Friands

Ingredients
- blackberries, fresh 300 g
- rapeseed oil 2 tbsp
- powdered sugar 180 g
- eggs 6 pcs
- butter 150 g
- vanilla sugar 50 g
- almonds, ground 150 g
- wheat flour, Type 405 150 g
- baking powder 1 tsp
Instructions
- 1. Preheat your oven to 180 degrees Celsius.
- 2. Thoroughly wash the blackberries.
- 3. Let the berries drain well in a sieve.
- 4. Grease a muffin tin with some butter or oil.
- 5. Sift the powdered sugar through a fine sieve to remove lumps.
- 6. Carefully separate the eggs so that the egg whites and yolks are separate.
- 7. Use the egg yolk for another recipe or store it in the fridge.
- 8. Place the egg whites in a clean bowl.
- 9. Whip the egg whites stiff using a hand mixer and a whisk attachment.
- 10. Gradually mix in 50 grams of the sifted powdered sugar into the egg whites.
- 11. Take a second, clean bowl.
- 12. Beat the butter in this bowl until fluffy.
- 13. Add the remaining powdered sugar to the butter.
- 14. Add the vanilla sugar to the butter mixture.
- 15. Beat everything together until creamy and fluffy.
- 16. Stir the ground almonds into the butter mixture.
- 17. Add the flour to the bowl.
- 18. Add the baking powder to the bowl.
- 19. Stir the dry ingredients until a smooth batter forms.
- 20. Gently fold the stiffly beaten egg whites into the batter using a spoon or spatula.
- 21. Distribute the finished batter evenly into the muffin tin cups.
- 22. Press the drained blackberries slightly into the batter.
- 23. Place the tin into the preheated oven.
- 24. Bake the friands for about 25 minutes until golden brown.
- 25. Remove the tin from the oven and let the cakes cool down for a short moment.
