  1. 1. Preheat your oven to 180 degrees Celsius.
  2. 2. Thoroughly wash the blackberries.
  3. 3. Let the berries drain well in a sieve.
  4. 4. Grease a muffin tin with some butter or oil.
  5. 5. Sift the powdered sugar through a fine sieve to remove lumps.
  6. 6. Carefully separate the eggs so that the egg whites and yolks are separate.
  7. 7. Use the egg yolk for another recipe or store it in the fridge.
  8. 8. Place the egg whites in a clean bowl.
  9. 9. Whip the egg whites stiff using a hand mixer and a whisk attachment.
  10. 10. Gradually mix in 50 grams of the sifted powdered sugar into the egg whites.
  11. 11. Take a second, clean bowl.
  12. 12. Beat the butter in this bowl until fluffy.
  13. 13. Add the remaining powdered sugar to the butter.
  14. 14. Add the vanilla sugar to the butter mixture.
  15. 15. Beat everything together until creamy and fluffy.
  16. 16. Stir the ground almonds into the butter mixture.
  17. 17. Add the flour to the bowl.
  18. 18. Add the baking powder to the bowl.
  19. 19. Stir the dry ingredients until a smooth batter forms.
  20. 20. Gently fold the stiffly beaten egg whites into the batter using a spoon or spatula.
  21. 21. Distribute the finished batter evenly into the muffin tin cups.
  22. 22. Press the drained blackberries slightly into the batter.
  23. 23. Place the tin into the preheated oven.
  24. 24. Bake the friands for about 25 minutes until golden brown.
