  1. 1. Thoroughly wash the broccoli under running water.
  2. 2. Break the broccoli down into small, bite-sized florets.
  3. 3. Also wash the arugula (arugula is a type of leafy green salad) thoroughly.
  4. 4. Spin the arugula dry so it does not become soggy.
  5. 5. Cut the lime in half.
  6. 6. Squeeze the juice out of the lime halves.
  7. 7. Heat oil in a large frying pan over high heat.
  8. 8. Fry the broccoli florets on all sides for about 5 minutes over high heat.
  9. 9. Add 2 tablespoons of water to the pan.
  10. 10. Let the water cook off until it has evaporated.
  11. 11. Remove the pan from the heat.
  12. 12. Let the broccoli cool down briefly.
  13. 13. Put 2 tablespoons of lime juice into a tall container.
  14. 14. Add the peanut butter.
  15. 15. Add another 2 tablespoons of water.
  16. 16. Add the raw cane sugar.
  17. 17. Blend all ingredients into a smooth, fine sauce.
  18. 18. Season the dressing with salt to taste.
  19. 19. Season the dressing with pepper to taste.
  20. 20. Place the cooled broccoli into a large salad bowl.
  21. 21. Add the dry arugula to the bowl.
  22. 22. Drizzle the salad with the peanut dressing.
  23. 23. Sprinkle the salad with roasted peanuts.
  24. 24. Serve the salad immediately.
