🍽️ Roasted Broccoli Salad with Creamy Peanut Dressing

Ingredients
- Broccoli 2 pc.
- Arugula 100 g
- Organic Limes 1 pc.
- Oil 2 tbsp
- Peanut butter 1 tbsp
- Brown sugar 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Peanuts, roasted and salted 100 g
Instructions
- 1. Thoroughly wash the broccoli under running water.
- 2. Break the broccoli down into small, bite-sized florets.
- 3. Also wash the arugula (arugula is a type of leafy green salad) thoroughly.
- 4. Spin the arugula dry so it does not become soggy.
- 5. Cut the lime in half.
- 6. Squeeze the juice out of the lime halves.
- 7. Heat oil in a large frying pan over high heat.
- 8. Fry the broccoli florets on all sides for about 5 minutes over high heat.
- 9. Add 2 tablespoons of water to the pan.
- 10. Let the water cook off until it has evaporated.
- 11. Remove the pan from the heat.
- 12. Let the broccoli cool down briefly.
- 13. Put 2 tablespoons of lime juice into a tall container.
- 14. Add the peanut butter.
- 15. Add another 2 tablespoons of water.
- 16. Add the raw cane sugar.
- 17. Blend all ingredients into a smooth, fine sauce.
- 18. Season the dressing with salt to taste.
- 19. Season the dressing with pepper to taste.
- 20. Place the cooled broccoli into a large salad bowl.
- 21. Add the dry arugula to the bowl.
- 22. Drizzle the salad with the peanut dressing.
- 23. Sprinkle the salad with roasted peanuts.
- 24. Serve the salad immediately.
