  1. 1. Preheat the oven to 180 °C (convection). Halve the onion, peel it, and dice it. Wash the broccoli, remove the core, divide it into small florets, and dice the rest.
  2. 2. Heat the oil in a pan on high heat and sauté the onion for about 2 minutes. Add the broccoli and bacon and continue to fry everything for approx. 5 minutes. Season with salt and pepper and let cool.
  3. 3. Wash the basil, shake it dry, and remove the thick stems. Peel the garlic and chop it. Puree both in a tall container together with the olive oil until smooth. Season with salt and pepper.
  4. 4. Mix the broccoli in the pan with the eggs and 3 tbsp pesto. Distribute the mixture evenly into a greased muffin tin and bake it in the oven for about 30 minutes. Serve the broccoli muffins with the remaining basil pesto. Enjoy your meal!
