  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the thyme and shake it dry.
  3. 3. Strip the thyme leaves from the stems.
  4. 4. Slice the crusty bread into thin slices.
  5. 5. Break the bread slices into small pieces.
  6. 6. Pulse the bread pieces in a blender or food processor until finely crumbled.
  7. 7. Melt 40 grams of butter in a small frying pan.
  8. 8. Mix the melted butter with the breadcrumbs, thyme, and pepper.
  9. 9. Slice the leek lengthwise.
  10. 10. Thoroughly wash the cut leek.
  11. 11. Wash the broccoli.
  12. 12. Cut the leek into half rings.
  13. 13. Separate the broccoli into small florets.
  14. 14. Peel the broccoli stems.
  15. 15. Slice the peeled broccoli stems.
  16. 16. Melt the remaining 30 grams of butter in a pot.
  17. 17. Sauté the leek and broccoli vegetables in it over medium heat.
  18. 18. Pour the broth over the vegetables.
  19. 19. Simmer the vegetables over low heat with the lid on for about 8 minutes.
  20. 20. Whisk the flour in a small bowl with 3 tablespoons of cold water until smooth.
  21. 21. Drain the vegetables in a colander.
  22. 22. Catch the cooking liquid (broth) in a container.
  23. 23. Bring the collected broth to a boil in a pot with the cream.
  24. 24. Pour the whisked flour mixture into the boiling cream.
  25. 25. Bring the sauce back to a boil while stirring.
  26. 26. Season the cream sauce with salt, pepper, and mustard.
  27. 27. Pat the fish fillets dry with kitchen paper.
  28. 28. Remove any bones from the fish if present.
  29. 29. Cut the fillets into wide pieces.
  30. 30. Season the fish pieces with salt and pepper.
  31. 31. Distribute the sautéed vegetables and fish pieces in a shallow baking dish with a capacity of at least 2 liters.
  32. 32. Drizzle the cream sauce over the vegetables and fish.
  33. 33. Distribute the seasoned breadcrumbs evenly on top.
  34. 34. Place the dish on the middle rack in the preheated oven.
  35. 35. Gratin the casserole for about 15 minutes.
