🍽️ Broccoli Fish Gratin with Leek and Thyme

Ingredients
- thyme, fresh 10 g
- crusty bread 150 g
- butter 70 g
- pepper, black ground pinch
- leek 1 pc.
- broccoli 500 g
- vegetable broth 100 ml
- wheat flour, Type 405 20 g
- whipping cream 250 ml
- sea salt pinch
- mustard 2 tsp
- cod back fillet 600 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the thyme and shake it dry.
- 3. Strip the thyme leaves from the stems.
- 4. Slice the crusty bread into thin slices.
- 5. Break the bread slices into small pieces.
- 6. Pulse the bread pieces in a blender or food processor until finely crumbled.
- 7. Melt 40 grams of butter in a small frying pan.
- 8. Mix the melted butter with the breadcrumbs, thyme, and pepper.
- 9. Slice the leek lengthwise.
- 10. Thoroughly wash the cut leek.
- 11. Wash the broccoli.
- 12. Cut the leek into half rings.
- 13. Separate the broccoli into small florets.
- 14. Peel the broccoli stems.
- 15. Slice the peeled broccoli stems.
- 16. Melt the remaining 30 grams of butter in a pot.
- 17. Sauté the leek and broccoli vegetables in it over medium heat.
- 18. Pour the broth over the vegetables.
- 19. Simmer the vegetables over low heat with the lid on for about 8 minutes.
- 20. Whisk the flour in a small bowl with 3 tablespoons of cold water until smooth.
- 21. Drain the vegetables in a colander.
- 22. Catch the cooking liquid (broth) in a container.
- 23. Bring the collected broth to a boil in a pot with the cream.
- 24. Pour the whisked flour mixture into the boiling cream.
- 25. Bring the sauce back to a boil while stirring.
- 26. Season the cream sauce with salt, pepper, and mustard.
- 27. Pat the fish fillets dry with kitchen paper.
- 28. Remove any bones from the fish if present.
- 29. Cut the fillets into wide pieces.
- 30. Season the fish pieces with salt and pepper.
- 31. Distribute the sautéed vegetables and fish pieces in a shallow baking dish with a capacity of at least 2 liters.
- 32. Drizzle the cream sauce over the vegetables and fish.
- 33. Distribute the seasoned breadcrumbs evenly on top.
- 34. Place the dish on the middle rack in the preheated oven.
- 35. Gratin the casserole for about 15 minutes.
