  1. 1. Mix the yeast with one tablespoon of water and the sugar.
  2. 2. Add one to two tablespoons of flour and stir everything into a smooth pre-dough.
  3. 3. Lightly dust the surface of the pre-dough with flour.
  4. 4. Cover the pre-dough and let it rise in a warm place for about 30 minutes.
  5. 5. Wait until small bubbles form on the surface.
  6. 6. Put the finished pre-dough into a large mixing bowl.
  7. 7. Add four eggs and a portion of the flour to the bowl.
  8. 8. Add the milk and the salt.
  9. 9. Knead the ingredients briefly until they have combined.
  10. 10. Add the remaining flour gradually.
  11. 11. Add the soft butter (100 g).
  12. 12. Knead the dough for about 10 minutes.
  13. 13. The dough should be smooth and softer than normal yeast dough.
  14. 14. Take the dough out of the bowl and place it on a greased work surface.
  15. 15. Knead the dough once more briefly.
  16. 16. Brush the dough with a little butter.
  17. 17. Divide the dough into 20 equal portions.
  18. 18. Place one portion in the palm of your hand.
  19. 19. Pull the dough with the fingertips of the other hand from the outside inwards.
  20. 20. This creates a smooth surface.
  21. 21. Turn the ball with the seam facing downwards.
  22. 22. Shape the ball nicely round in your hand.
  23. 23. Grease the enamel baking dish with the remaining soft butter.
  24. 24. Take the soft cheese out of the packaging.
  25. 25. Cut a cross into the surface of the cheese.
  26. 26. Place the wooden box with the cheese in the center of the dish.
