🍽️ French Brioche Wreath with Soft Cheese

Ingredients
- yeast, fresh 15 g
- water 2 tbsp
- sugar 40 g
- wheat flour, type 550 400 g
- eggs 4 pcs
- milk 2 tbsp
- salt 0.5 tsp
- butter 140 g
- camembert 1 pcs
- egg yolk 1 pcs
Instructions
- 1. Mix the yeast with one tablespoon of water and the sugar.
- 2. Add one to two tablespoons of flour and stir everything into a smooth pre-dough.
- 3. Lightly dust the surface of the pre-dough with flour.
- 4. Cover the pre-dough and let it rise in a warm place for about 30 minutes.
- 5. Wait until small bubbles form on the surface.
- 6. Put the finished pre-dough into a large mixing bowl.
- 7. Add four eggs and a portion of the flour to the bowl.
- 8. Add the milk and the salt.
- 9. Knead the ingredients briefly until they have combined.
- 10. Add the remaining flour gradually.
- 11. Add the soft butter (100 g).
- 12. Knead the dough for about 10 minutes.
- 13. The dough should be smooth and softer than normal yeast dough.
- 14. Take the dough out of the bowl and place it on a greased work surface.
- 15. Knead the dough once more briefly.
- 16. Brush the dough with a little butter.
- 17. Divide the dough into 20 equal portions.
- 18. Place one portion in the palm of your hand.
- 19. Pull the dough with the fingertips of the other hand from the outside inwards.
- 20. This creates a smooth surface.
- 21. Turn the ball with the seam facing downwards.
- 22. Shape the ball nicely round in your hand.
- 23. Grease the enamel baking dish with the remaining soft butter.
- 24. Take the soft cheese out of the packaging.
- 25. Cut a cross into the surface of the cheese.
- 26. Place the wooden box with the cheese in the center of the dish.
