  1. 1. Peel, wash, and cube the potatoes. Bring a pot of salted water to a boil and cover, cooking on medium heat for about 20 minutes.
  2. 2. Halve, peel, and finely dice the onion. Wash the chives, pat dry, and cut into small rings.
  3. 3. Heat 1 tablespoon of oil in a pot over high heat and sauté the onions for about 2 minutes. Add the sauerkraut and bay leaf, pour in the vegetable broth, cover, and simmer on medium heat for about 20 minutes.
  4. 4. Heat 2 tablespoons of oil in a pan over high heat and fry the bratwursts until golden brown on all sides for about 5 minutes. Deglaze with 300 ml of water and stir in the sauce thickener. Bring to a boil for about 3 minutes and season the sauce.
  5. 5. Drain the potatoes using the lid. Add milk and butter to the pot and mash with a potato masher until smooth. Season with salt, pepper, and nutmeg.
  6. 6. Taste the sauerkraut. Serve by arranging the mashed potatoes, bratwurst, and gravy on plates. Garnish with chives and crispy onions. Enjoy your meal!
