🥗 Fried Sausages with Crispy Potato-Bacon Mash and Crunchy Kohlrabi-Cucumber Salad

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- oil 4 tbsp
- bacon strips 100 g
- cucumbers 1 pc.
- kohlrabi 1 pc.
- spring onions 0.5 bunch
- vinegar 2 tbsp
- sweet mustard 2 tsp
- mustard 10 g
- pepper, black ground pinch
- sugar pinch
- grill sausages 4 pc.
- milk 100 ml
- butter 2 tbsp
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into cubes of about 2 to 3 centimeters.
- 3. Place the potato pieces in a pot and cover them with salted water.
- 4. Put the lid on the pot and bring the water to a boil.
- 5. Cook the potatoes over medium heat for about 15 to 20 minutes until they are soft.
- 6. Heat 1 tablespoon of oil in a frying pan over medium heat.
- 7. Fry the bacon in it for 3 to 4 minutes until crispy.
- 8. Remove the bacon from the pan and let it drain on a plate lined with kitchen paper.
- 9. Set the bacon aside and leave the pan unwashed.
- 10. Wash the cucumber and cut off the ends.
- 11. Slice the cucumber lengthwise into thin slices.
- 12. Cut the cucumber slices diagonally into thin strips.
- 13. Wash the kohlrabi and peel it.
- 14. Remove any tough parts from the kohlrabi if necessary.
- 15. Cut the kohlrabi into thin slices as well, and then into fine strips.
- 16. Wash the spring onions and dry them.
- 17. Cut off the roots of the spring onions.
- 18. Slice the spring onions into thin rings.
- 19. Mix vinegar, 2 tablespoons of water, sweet mustard, mustard, and 2 tablespoons of oil in a bowl.
- 20. Season the sauce with salt, pepper, and sugar to taste.
- 21. Heat 1 tablespoon of oil in the same pan over medium to high heat.
- 22. Fry the sausages on all sides for about 6 to 8 minutes until golden brown.
- 23. Drain the cooked potatoes.
- 24. Add milk and butter to the potatoes.
- 25. Mash the potatoes roughly with a potato masher or a fork.
- 26. Mix the dressing with the prepared salad.
- 27. Fold the crispy bacon cubes into the potato mash.
- 28. Season the mash with salt if necessary.
- 29. Plate everything: mash, sausages, and salad.
- 30. Serve the dish and enjoy your meal!
