  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Place the potatoes in a pot and cover them with lightly salted water.
  3. 3. Bring the water to a boil and simmer the potatoes over medium heat for about 20 minutes.
  4. 4. Drain the cooking water and rinse the potatoes briefly with cold water to stop the cooking process.
  5. 5. Let the potatoes drain and cool down completely.
  6. 6. Peel the cooled potatoes.
  7. 7. Slice the potatoes into rounds about 0.5 cm thick.
  8. 8. Halve the onions and remove the outer skin.
  9. 9. Dice the onions finely.
  10. 10. Add the bacon and 1 tablespoon of oil to a frying pan.
  11. 11. Fry the bacon over low to medium heat for about 8 minutes until crispy.
  12. 12. Remove the bacon from the pan and let it drain briefly.
  13. 13. Leave the frying fat in the pan.
  14. 14. Add the remaining oil to the pan with the bacon drippings.
  15. 15. Fry the potato slices over medium heat for about 15 minutes until golden brown and crispy.
  16. 16. Gently turn the potato slices once during cooking.
  17. 17. Add the diced onions towards the end of the cooking time.
  18. 18. Sauté the onions for 1 to 2 minutes until translucent.
  19. 19. Return the prepared bacon to the pan.
  20. 20. Heat everything together briefly.
  21. 21. Wash the parsley and shake it dry.
  22. 22. Remove the thick stems from the parsley.
  23. 23. Chop the parsley coarsely.
  24. 24. Season the fried potatoes with salt and pepper to taste.
  25. 25. Sprinkle the finished potatoes with the chopped parsley.
  26. 26. Serve the fried potatoes hot.
