🍽️ Crispy Fried Potatoes with Bacon

Ingredients
- Potatoes, mainly waxy 1 kg
- Salt pinch
- Onions, yellow 1 pc.
- Bacon strips 125 g
- Oil 4 tbsp
- Parsley, fresh 10 g
- Pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the potatoes in a pot and cover them with lightly salted water.
- 3. Bring the water to a boil and simmer the potatoes over medium heat for about 20 minutes.
- 4. Drain the cooking water and rinse the potatoes briefly with cold water to stop the cooking process.
- 5. Let the potatoes drain and cool down completely.
- 6. Peel the cooled potatoes.
- 7. Slice the potatoes into rounds about 0.5 cm thick.
- 8. Halve the onions and remove the outer skin.
- 9. Dice the onions finely.
- 10. Add the bacon and 1 tablespoon of oil to a frying pan.
- 11. Fry the bacon over low to medium heat for about 8 minutes until crispy.
- 12. Remove the bacon from the pan and let it drain briefly.
- 13. Leave the frying fat in the pan.
- 14. Add the remaining oil to the pan with the bacon drippings.
- 15. Fry the potato slices over medium heat for about 15 minutes until golden brown and crispy.
- 16. Gently turn the potato slices once during cooking.
- 17. Add the diced onions towards the end of the cooking time.
- 18. Sauté the onions for 1 to 2 minutes until translucent.
- 19. Return the prepared bacon to the pan.
- 20. Heat everything together briefly.
- 21. Wash the parsley and shake it dry.
- 22. Remove the thick stems from the parsley.
- 23. Chop the parsley coarsely.
- 24. Season the fried potatoes with salt and pepper to taste.
- 25. Sprinkle the finished potatoes with the chopped parsley.
- 26. Serve the fried potatoes hot.
