🍽️ Sweet Potato Hash with Feta

Ingredients
- Sweet potatoes 1 kg
- Salt pinch
- Green beans 200 g
- Onions, red 1 pc.
- Arugula 100 g
- Feta 200 g
- Oil 2 tbsp
- Pepper, black ground pinch
Instructions
- 1. Wash the sweet potatoes thoroughly and boil them in a pot of salted water for about 15 minutes. Meanwhile, wash the beans, trim the ends, and cook them together with the potatoes for the last 5 minutes. Then drain everything in a sieve and rinse with cold water.
- 2. Cut the onions in half, peel them, and slice them into thin strips. Peel the cooked sweet potatoes and slice them. Rinse the arugula and drain it well. Crumble the feta with your hands.
- 3. Heat the oil in a pan over medium to high heat and fry the sweet potato slices for about 5 minutes until crispy. Then add the beans and onions and fry for another 5 minutes. Season with salt and pepper.
- 4. Plate the fried sweet potatoes, top with the arugula, and serve with the crumbled feta. Enjoy your meal!
