  2. 2. Remove the cores and cut the apples into small cubes.
  3. 3. Heat two tablespoons of sugar in a pot over medium heat.
  4. 4. Let the sugar melt for about two minutes.
  5. 5. Add the apple cubes and cinnamon to the pot.
  6. 6. Mix the ingredients well with the melted sugar.
  7. 7. Deglaze the mixture with fifty milliliters of water.
  8. 8. Let the compote simmer for about three minutes.
  9. 9. Gently fold the raisins into the warm compote.
  10. 10. Take a bowl and fill it with soy yogurt.
  11. 11. Add the vegan spread in the natural variety.
  12. 12. Add a packet of vanilla sugar and two tablespoons of sugar.
  13. 13. Stir the mixture until smooth with no lumps remaining.
  14. 14. Crush the speculoos cookies roughly.
  15. 15. Distribute the apple compote evenly among your glasses.
  16. 16. Add one tablespoon of the soy yogurt cream on top of the compote.
  17. 17. Sprinkle the crushed speculoos cookies over the top.
  18. 18. Finally, add another tablespoon of soy yogurt cream into each glass.
  19. 19. Dust the dessert with cinnamon at the end.
