  1. 1. Preheat the oven to 210 degrees Celsius top/bottom heat.
  2. 2. Line a baking tray with baking paper.
  3. 3. Place a baking frame the size of the tray onto the prepared baking sheet.
  4. 4. Whisk the eggs with 100 grams of sugar, one teaspoon of vanilla extract, and a pinch of salt.
  5. 5. Beat the mixture for about 10 minutes until it is white and creamy.
  6. 6. Sift 100 grams of flour over the egg mixture.
  7. 7. Gently fold the flour in, being careful not to deflate the air in the mixture.
  8. 8. Spread the dough evenly in the baking frame.
  9. 9. Smooth the surface of the dough.
  10. 10. Bake the sponge base for 8 to 9 minutes in the preheated oven.
  11. 11. Remove the base from the oven.
  12. 12. Immediately release the sponge from the hot tray and remove the baking frame.
  13. 13. Turn the sponge out onto a work surface and let it cool.
  14. 14. Cut the lemon in half and squeeze out the juice.
  15. 15. Let 2 tablespoons of sugar caramelize in a pan.
  16. 16. Cut the apples into small cubes.
  17. 17. Add the apple cubes to the caramelized sugar.
  18. 18. Fry the apples for a few minutes until they take on some color.
  19. 19. Deglaze the apples with Amaretto.
  20. 20. Add the cranberries, cinnamon, and lemon juice.
  21. 21. Let the apple filling reduce for a short time.
  22. 22. Set the filling aside to cool down.
  23. 23. Mix mascarpone, powdered sugar, one teaspoon of vanilla extract, and lemon paste until creamy.
  24. 24. Slowly add the cream to the mascarpone mixture.
  25. 25. Whip the cream stiff using cream stabilizer.
  26. 26. Spread the mascarpone cream onto the cooled sponge base.
  27. 27. Spread the cooled apple filling over the cream.
  28. 28. Roll the sponge base tightly using a kitchen towel.
  29. 29. Place the roll in the refrigerator for about half an hour.
  30. 30. Take the roll out of the refrigerator.
  31. 31. Place the roll on a serving plate.
  32. 32. Dust the roll with cocoa powder before serving.
  33. 33. Decorate the roll with chocolate stars.
