🍰 Baked Apple with Speculatius Cream Towers

Ingredients
- almonds, whole 30 g
- apples, red 500 g
- brown sugar 50 g
- vanilla sugar 1 packet
- apple juice, cloudy 100 ml
- cinnamon pinch
- vegan fresh spread, plain 300 g
- orange liqueur 2 tbsp
- sugar 3 tbsp
- lemon 1 pc.
- speculatius 600 g
- cocoa powder 2 tbsp
Instructions
- 1. Roughly chop the almonds.
- 2. Wash the apples.
- 3. Peel the apples.
- 4. Quarter the apples.
- 5. Core the apple quarters.
- 6. Dice the cored apple pieces.
- 7. Heat a pan over medium heat.
- 8. Let the sugar and vanilla sugar lightly caramelize in the pan.
- 9. Add the apple pieces to the caramelized mixture.
- 10. Pour in apple juice.
- 11. Add cinnamon.
- 12. Simmer the mixture on low heat for about 5 minutes.
- 13. Remove the pan from the heat.
- 14. Fold in the chopped almonds into the apple compote.
- 15. Let the apple compote cool down completely.
- 16. Place the vegan spread into a bowl.
- 17. Add orange liqueur and sugar to the spread.
- 18. Mix the mixture with a hand mixer.
- 19. Wash the lemon.
- 20. Dry the lemon.
- 21. Finely grate 1 teaspoon of lemon zest.
- 22. Cut the lemon in half.
- 23. Squeeze the juice from the lemon.
- 24. Add the lemon zest to the cream.
- 25. Add 2 tablespoons of lemon juice to the cream.
- 26. Stir the ingredients into the cream.
- 27. Fill the cream into a piping bag.
- 28. Attach a star nozzle to the piping bag.
- 29. Pipe dollops of cream onto a speculatius cookie.
- 30. Distribute some apple compote over the cream layer.
- 31. Stack three cookies on top of each other to form the tiramisu.
- 32. Dust the finished tiramisu with a little cocoa powder.
