Ingredients
- apples, red 4 pcs.
- lemons 1 pcs.
- hazelnut kernels, chopped and roasted 3 tbsp
- almonds, sliced 3 tbsp
- butter 3 tbsp
- marzipan raw mass 80 g
- raisins 30 g
- brown rum 3 tbsp
- cinnamon 0.25 tsp
- allspice, ground 0.25 tsp
- gingerbread spice mix 0.5 tsp
- vanilla pod 1 pcs.
- milk 330 ml
- sugar 3 tbsp
- cornstarch 1 tsp
Instructions
- 1. Preheat the oven to 180 °C (convection). Wash the small apples, cut off the top about 1⁄2 cm, remove the core and carefully hollow them out so that a rim of approx. 1 cm remains. Halve a lemon, squeeze out the juice and brush the apples with it.
- 2. Heat a pan over medium heat and roast the nuts for about 2 minutes. Add the butter and let it melt. Mix the marzipan with the nuts, butter, raisins, rum, cinnamon, allspice and gingerbread spice in a bowl.
- 3. Grease a baking dish lightly with butter, place the apples in it and fill them with the marzipan mixture. Press the filling well. Bake the baked apples for about 40 minutes in the oven. After about 25 minutes of baking time, place the apple lids in the dish and cover the apples with some aluminum foil.
- 4. Cut the vanilla pod lengthwise and scrape out the pulp with a knife. Heat a pot over medium heat, bring 300 ml milk, the vanilla pulp, the pod and the sugar to a boil. Remove the pot from the heat and let it steep covered for about 15 minutes.
- 5. Remove the vanilla pod from the pot and bring the milk to a boil again. Whisk the starch in a bowl with 3 tbsp milk, add it to the vanilla milk and let it simmer for about 2 minutes. Then let it cool down.
- 6. Take the baked apple out of the oven. Place the apple lid on the marzipan filling and serve it with the vanilla sauce. Enjoy!
