🍰 Baked Apple with Date and Marzipan Filling and Vanilla Soy Yogurt

Ingredients
- apples, red 4 pcs.
- soft dates, dried and pitted 5 pcs.
- marzipan raw mass 100 g
- cinnamon 1 tsp
- almonds, sliced 2 tbsp
- vanilla pod 1 pcs.
- soy yogurt 400 g
- agave syrup 1 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the apples thoroughly and dry them.
- 3. Remove the core from the apples, but make sure the bottom remains intact.
- 4. Finely chop the dates and the marzipan.
- 5. Mix the chopped dates and marzipan with cinnamon and almonds.
- 6. Fill the hollowed-out apples with the date and marzipan mixture.
- 7. Place the filled apples in a baking dish.
- 8. Bake the apples in the oven for about 30 minutes.
- 9. Remove the apples when they are slightly soft and golden brown.
- 10. Scrape the seeds out of the vanilla pod.
- 11. Mix the vanilla seeds with the soy yogurt and 1 to 2 tablespoons of agave syrup.
- 12. Chill the yogurt mixture until you are ready to serve.
- 13. Plate the warm apples.
- 14. Serve the apples with the vanilla soy yogurt.
- 15. Garnish the dish with almond slices and cinnamon as desired.
