  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the apples thoroughly and dry them.
  3. 3. Remove the core from the apples, but make sure the bottom remains intact.
  4. 4. Finely chop the dates and the marzipan.
  5. 5. Mix the chopped dates and marzipan with cinnamon and almonds.
  6. 6. Fill the hollowed-out apples with the date and marzipan mixture.
  7. 7. Place the filled apples in a baking dish.
  8. 8. Bake the apples in the oven for about 30 minutes.
  9. 9. Remove the apples when they are slightly soft and golden brown.
  10. 10. Scrape the seeds out of the vanilla pod.
  11. 11. Mix the vanilla seeds with the soy yogurt and 1 to 2 tablespoons of agave syrup.
  12. 12. Chill the yogurt mixture until you are ready to serve.
  13. 13. Plate the warm apples.
  14. 14. Serve the apples with the vanilla soy yogurt.
  15. 15. Garnish the dish with almond slices and cinnamon as desired.
