🍰 Baked Apples with Cream Cheese Filling and Crumble Topping

Ingredients
- butter 50 g
- sugar 50 g
- wheat flour, Type 405 100 g
- salt pinch
- tonka bean paste 1 tsp
- cream cheese, plain 300 g
- powdered sugar 40 g
- cornstarch 30 g
- eggs 2 pcs
- lemons 1 pcs
- vanilla extract 1 tsp
- apples, red 6 pcs
- walnut kernels 50 g
Instructions
- 1. Mix the butter with the sugar, flour, a pinch of salt, and the tonka bean paste. Use a dough cutter or a hand mixer with dough hooks. Work the ingredients together until they form crumbly streusel. Place the streusel in the refrigerator for later use.
- 2. Stir the cream cheese with the powdered sugar and starch in a bowl until smooth. Wash the lemon thoroughly. Grate some fine zest and squeeze out the juice. Add one teaspoon of lemon juice and a pinch of lemon zest to the cream cheese mixture. Add the eggs and vanilla extract. Stir everything well until a creamy mass forms. Fill the cream into a squeeze bottle or a freezer bag.
- 3. Preheat your oven. Set the temperature to 180 degrees Celsius for top and bottom heat.
- 4. Wash the apples. Cut a thin lid from the top. Carefully pierce the inside of the apples with a cutter. Then hollow out the apples with a spoon or knife. Aim to go about two centimeters deep, but leave a rim about one centimeter thick so the skin remains stable. Brush the cut surfaces with a little lemon juice to prevent them from turning brown. Remove the core from the remaining apple pieces. You can cook these leftovers into apple sauce or eat them directly.
- 5. Chop the walnuts roughly. Place the hollowed-out apples in a baking dish. Fill the apples with the cream cheese cream from the bottle. Distribute the cold streusel and the chopped walnuts evenly over the filled apples. Bake the apples in the preheated oven for about 35 minutes. Remove the apples from the oven. Let them cool for ten to twenty minutes. Serve them while still warm. Enjoy making this recipe!
