🍰 Baked Apple Treats

Ingredients
- Sugar 130 g
- Yeast, fresh 15 g
- Milk 100 ml
- Oranges 1 pc.
- Wheat flour, Type 405 250 g
- butter 60 g
- Vanilla Sugar 1 packet
- Apples, red 1 pc.
- Marzipan base 40 g
- Cinnamon 1 tsp
- Cardamom, ground 0.5 tsp
Instructions
- 1. Put 50 grams of sugar into the mixing container.
- 2. Place the measuring cup on top.
- 3. Grind the sugar for 10 seconds on speed 10 to make powdered sugar.
- 4. Transfer the powdered sugar to another container and set it aside.
- 5. Add yeast, milk, and another 50 grams of sugar into the mixing container.
- 6. Mix the mixture for 1 minute on speed 2 at 37 degrees Celsius.
- 7. Let the mixture rise, covered, for about 10 minutes.
- 8. Meanwhile, grate the peel of an orange.
- 9. Squeeze out 4 tablespoons of orange juice.
- 10. Set aside the orange juice and the zest.
- 11. Add the orange zest, flour, butter, and vanilla sugar to the mixing container.
- 12. Knead the ingredients using the dough kneading attachment for 2 minutes.
- 13. Push the dough down from the inner wall of the container using a spatula.
- 14. If the dough is too sticky, add up to 50 grams of flour.
- 15. Knead again for 1 minute with the measuring cup in place.
- 16. Take the dough out of the mixing container.
- 17. Knead the dough briefly by hand.
- 18. Shape the dough into a ball.
- 19. Place the ball into a bowl.
- 20. Cover the bowl.
- 21. Let the dough rise in a warm place for about 1 hour.
- 22. Clean the mixing container.
- 23. Wash an apple.
- 24. Dry the apple.
- 25. Core the apple.
- 26. Chop the apple in the mixing container for 10 seconds on speed 6.
- 27. Push the apple pieces down with a spatula.
- 28. Add marzipan, cinnamon, cardamom, and the remaining sugar.
- 29. Add the orange juice.
- 30. Heat the mixture for 8 minutes on speed 1 at 100 degrees Celsius.
- 31. Let the apple mixture cool down.
- 32. Preheat the oven to 180 degrees Celsius.
- 33. Line a baking tray with baking paper.
- 34. Divide the dough into two parts.
- 35. Roll both parts into rectangles with a thickness of 0.5 cm.
- 36. Spread the apple mixture evenly over one of the rectangles.
- 37. Cover the filling with the second rectangle.
- 38. Cut the pastry into 2 cm squares.
- 39. Let the squares rise for about 5 minutes.
- 40. Brush the squares with milk.
- 41. Bake the squares in the oven for about 20 minutes until golden brown.
- 42. Take the baked apple treats out of the oven.
- 43. Let them cool down briefly.
- 44. Dust them with the homemade powdered sugar.
- 45. Serve the treat.
