🍰 Caramelized Baked Apples with Fluffy Kaiserschmarrn

Ingredients
- Raisins 50 g
- Apple juice 50 ml
- Egg whites 3 pcs.
- Salt pinch
- Sugar 110 g
- Egg yolks 3 pcs.
- Vanilla extract 1 tsp
- Quark, low-fat 250 g
- Lemon zest pinch
- Butter 105 g
- Milk 200 ml
- Wheat flour, Type 405 125 g
- Apples, red 3 pcs.
- Walnut kernels 100 g
- Cinnamon 1 tsp
- Lemon juice 1 tbsp
- Icing sugar 1 tbsp
Instructions
- 1. Place the raisins in a small bowl and cover them with apple juice. Let them soak until soft to prevent burning during baking. You can also use rum or cranberries instead.
- 2. Separate the eggs. Whip the egg whites with a pinch of salt in a clean bowl until almost stiff.
- 3. Stir in one tablespoon of sugar until dissolved and the mixture is semi-stiff.
- 4. Whisk the egg yolks in a separate bowl with vanilla extract until white and creamy.
- 5. Stir the quark (curd cheese) into the yolk mixture until smooth.
- 6. Add a pinch of lemon zest and 25 grams of melted butter to the mixture and stir briefly.
- 7. Alternately add milk and sifted flour to the bowl and stir briefly until a smooth batter forms.
- 8. Gently fold the prepared egg whites into the batter in two or three additions.
- 9. Grease a non-stick pan with baking spray or ghee and heat it over medium heat.
- 10. Pour the Kaiserschmarrn batter into the hot pan.
- 11. Distribute the soaked raisins evenly over the batter.
- 12. Cover the pan with a lid and bake the Kaiserschmarrn over medium heat for 8 to 10 minutes until cooked through but not too dark.
- 13. Core the apples and cut them into thin wedges.
- 14. Roughly chop the walnuts.
- 15. Put two tablespoons of sugar into a separate pan or casserole dish and heat it until it lightly caramelizes.
- 16. Add the apple wedges to the pan and fry them with the caramelized sugar for 3 to 4 minutes.
- 17. Add the walnuts and cinnamon and fry everything briefly with 30 grams of butter.
- 18. Add the lemon juice and the remaining apple juice, then turn off the heat.
- 19. Flip the Kaiserschmarrn by letting it slide onto a plate, inverting the pan over it, and flipping them together.
- 20. Place the Kaiserschmarrn back into the pan and finish cooking the second side for about 3 to 4 minutes.
- 21. Add 50 grams of butter to the pan with the apples and add the finished Kaiserschmarrn.
- 22. Tear the Kaiserschmarrn into rough pieces using two forks.
- 23. Sprinkle 50 grams of sugar over the Kaiserschmarrn.
- 24. Fry the Kaiserschmarrn together with the apples all around until everything is caramelized.
- 25. Dust the finished Kaiserschmarrn with powdered sugar before serving.
