🍰 Caramelized Apple Carpaccio with Speculoos Crumble

Ingredients
- apples, red 2 pcs
- butter 1 tbsp
- sugar 2 tbsp
- cinnamon stick 1 pcs
- apple juice 100 ml
- whole hazelnut kernels 4 tbsp
- speculaas 6 pcs
- soy yogurt 150 g
- cinnamon 1 tsp
Instructions
- 1. Wash the apples thoroughly.
- 2. Slice the apples into very thin slices or use a peeler.
- 3. Heat a frying pan over medium heat.
- 4. Melt 1 tablespoon of butter in the pan.
- 5. Fry the apple slices in the butter for about 2 minutes.
- 6. Sprinkle 2 tablespoons of sugar over the apples.
- 7. Caramelize the sugar for another 3 minutes.
- 8. Add a cinnamon stick to the pan.
- 9. Deglaze the mixture with apple juice.
- 10. Let the apple mixture simmer briefly.
- 11. Remove the pan from the heat.
- 12. Heat a second frying pan over medium heat.
- 13. Roast the hazelnuts in the pan for about 2 minutes.
- 14. Let the nuts cool down briefly.
- 15. Chop the hazelnuts coarsely.
- 16. Break the speculoos cookies into coarse pieces.
- 17. Crumble the speculoos pieces.
- 18. Put soy yogurt into a bowl.
- 19. Mix the yogurt with 1 teaspoon of cinnamon.
- 20. Season the yogurt mixture to taste with a little sugar.
- 21. Distribute the warm apple slices with the sauce onto plates.
- 22. Top the carpaccio with the cinnamon yogurt.
- 23. Add the chopped hazelnuts on top.
- 24. Sprinkle the speculoos crumbs as the final topping.
- 25. Serve the dish immediately and enjoy.
