🍰 Warm Apple Dumplings with Yeast Dough

Ingredients
- yeast, fresh 42 g
- water 220 ml
- sugar 110 g
- wheat flour, type 405 500 g
- milk 220 ml
- eggs 1 pc.
- salt 1 tsp
- butter 120 g
- apples, red 4 pc.
- cornstarch 30 g
- lemon zest pinch
- lemon juice 1 tsp
- cinnamon 0.5 tsp
- vanilla extract 1 tsp
- powdered sugar 2 tbsp
Instructions
- 1. Mix the yeast with 2 tablespoons of water and 60 grams of sugar in a large bowl.
- 2. Add the flour, the egg, the milk, the salt, and 80 grams of soft butter.
- 3. Knead the dough for about 10 minutes until it is smooth and elastic.
- 4. Shape the dough into a ball, grease it slightly, and let it rise covered for about 1 hour.
- 5. Quarter the apples, remove the cores, and cut the flesh into small pieces.
- 6. Heat 50 grams of sugar in a pan and let it caramelize.
- 7. Add the apple pieces to the pan and fry them for about 5 to 6 minutes while stirring.
- 8. Deglaze the apples with 150 grams of water.
- 9. Mix 50 grams of water with the cornstarch and add this mixture along with cinnamon to the pan.
- 10. Stir everything well until the filling thickens.
- 11. Stir 1 teaspoon of vanilla extract, lemon juice, and lemon zest into the warm filling.
- 12. Grease a baking pan (36 x 28 cm) with some butter.
- 13. Divide the dough into 12 equal portions and shape them into balls.
- 14. Flatten each ball slightly and place some filling in the center.
- 15. Seal the dough around the filling so that nothing leaks out.
- 16. Place the dumplings in the baking pan with some space between them.
- 17. Brush the dumplings with 40 grams of soft butter.
- 18. Place the pan in the cold oven and bake the dumplings until golden brown.
- 19. Remove the dumplings from the oven and dust them with powdered sugar.
- 20. Serve the dumplings while still warm or cold.
