  1. 1. Mix the yeast with 2 tablespoons of water and 60 grams of sugar in a large bowl.
  2. 2. Add the flour, the egg, the milk, the salt, and 80 grams of soft butter.
  3. 3. Knead the dough for about 10 minutes until it is smooth and elastic.
  4. 4. Shape the dough into a ball, grease it slightly, and let it rise covered for about 1 hour.
  5. 5. Quarter the apples, remove the cores, and cut the flesh into small pieces.
  6. 6. Heat 50 grams of sugar in a pan and let it caramelize.
  7. 7. Add the apple pieces to the pan and fry them for about 5 to 6 minutes while stirring.
  8. 8. Deglaze the apples with 150 grams of water.
  9. 9. Mix 50 grams of water with the cornstarch and add this mixture along with cinnamon to the pan.
  10. 10. Stir everything well until the filling thickens.
  11. 11. Stir 1 teaspoon of vanilla extract, lemon juice, and lemon zest into the warm filling.
  12. 12. Grease a baking pan (36 x 28 cm) with some butter.
  13. 13. Divide the dough into 12 equal portions and shape them into balls.
  14. 14. Flatten each ball slightly and place some filling in the center.
  15. 15. Seal the dough around the filling so that nothing leaks out.
  16. 16. Place the dumplings in the baking pan with some space between them.
  17. 17. Brush the dumplings with 40 grams of soft butter.
  18. 18. Place the pan in the cold oven and bake the dumplings until golden brown.
  19. 19. Remove the dumplings from the oven and dust them with powdered sugar.
  20. 20. Serve the dumplings while still warm or cold.
