  1. 1. Halve the onions and peel them. Cut them into very small cubes.
  2. 2. Peel the carrots and cut off the ends. Grate them coarsely or dice them small.
  3. 3. Wash the celery and cut off the ends. Dice it finely as well.
  4. 4. Heat 2 tablespoons of oil in a pot on the highest setting.
  5. 5. Fry the minced meat in it for about 4 to 5 minutes until it is crumbly.
  6. 6. Season the meat with salt and pepper.
  7. 7. Remove the meat from the pot and set it aside.
  8. 8. Add the remaining oil to the same pot and heat it.
  9. 9. Add the onions, carrots, and celery to the pot.
  10. 10. Sauté the vegetables briefly until they become soft.
  11. 11. Stir the tomato paste into the vegetables.
  12. 12. Roast the tomato paste for about 1 minute.
  13. 13. Add the chopped tomatoes to the pot.
  14. 14. Pour in the red wine.
  15. 15. Return the fried minced meat to the pot.
  16. 16. Season the sauce with salt, pepper, oregano, and sugar.
  17. 17. Let the sauce simmer covered for about 50 minutes.
  18. 18. Remove the lid and let the sauce reduce uncovered for another 10 minutes.
  19. 19. Stir the sauce occasionally during this time.
  20. 20. Finally, taste the Bolognese sauce and adjust the seasoning with salt and pepper.
  21. 21. Serve the sauce and enjoy your meal!
