  1. 1. Cut onions in half, peel, and dice into small cubes. Wash peppers thoroughly, halve, remove the core and seeds, and dice as well.
  2. 2. Heat oil in a pot over high heat and sauté onions and peppers for about 3 minutes. Add broth and chopped tomatoes, season with thyme, salt, cayenne pepper, and a pinch of sugar, and simmer covered for about 15 minutes.
  3. 3. Drain beans in a colander. Slice cabanossi into thick rounds. Wash parsley, shake dry, pluck leaves from stems, and chop finely.
  4. 4. Add beans and cabanossi to the pot and warm for about 5 minutes. Adjust seasoning and serve sprinkled with chopped parsley. Enjoy your meal!
