🍲 Bean Stew with Cabanossi

Ingredients
- onions, yellow 2 pcs.
- peppers, yellow 2 pcs.
- peppers, red 1 pcs.
- oil 2 tbsp.
- vegetable broth 500 ml
- tomatoes, chopped 800 g
- thyme, stripped 0.5 tsp.
- salt pinch
- cayenne pepper pinch
- sugar pinch
- white beans in can 300 g
- cabanossi 4 pcs.
- parsley, fresh 10 g
Instructions
- 1. Cut onions in half, peel, and dice into small cubes. Wash peppers thoroughly, halve, remove the core and seeds, and dice as well.
- 2. Heat oil in a pot over high heat and sauté onions and peppers for about 3 minutes. Add broth and chopped tomatoes, season with thyme, salt, cayenne pepper, and a pinch of sugar, and simmer covered for about 15 minutes.
- 3. Drain beans in a colander. Slice cabanossi into thick rounds. Wash parsley, shake dry, pluck leaves from stems, and chop finely.
- 4. Add beans and cabanossi to the pot and warm for about 5 minutes. Adjust seasoning and serve sprinkled with chopped parsley. Enjoy your meal!
