Ingredients
- Sugar 300 g
- Salt pinch
- Wheat flour, Type 405 190 g
- Baking powder 0.5 tsp
- Baking soda 0.25 tsp
- Eggs 7 pcs
- Buttermilk 200 ml
- Butter 400 g
- Lemons 1 pcs
- Vanilla extract 2 tsp
- Red currants, fresh 60 g
- Icing sugar 60 g
- Food coloring, yellow 1 tsp
- Food coloring, green 1 tsp
- Food coloring, red 1 tsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Mix 150 grams of sugar, a pinch of salt, 190 grams of flour, and half a teaspoon of baking soda in a large bowl.
- 3. Add 2 eggs, 200 milliliters of buttermilk, 150 grams of melted butter, 1 teaspoon of vanilla flavoring, some lemon zest, and lemon juice to taste.
- 4. Stir the ingredients until you have a smooth batter.
- 5. Gently fold the redcurrants into the batter.
- 6. Distribute the mixture evenly into the muffin cups.
- 7. Bake the muffins for about 20 minutes.
- 8. Let the muffins cool down completely.
- 9. Put 85 grams of egg whites, 150 grams of sugar, and a pinch of salt into a metal bowl.
- 10. Place the bowl over a pot with simmering water.
- 11. Whisk the mixture with a whisk or hand mixer.
- 12. Heat the mixture for 5 to 7 minutes while stirring continuously.
- 13. Ensure that the temperature reaches at least 60 degrees Celsius.
- 14. Remove the bowl from the water bath once the sugar has dissolved.
