🍲 Creamy Cauliflower Soup with Crispy Puff Pastry Trees

Ingredients
- yellow onions 1 pc.
- cauliflower 1 pc.
- green apples 1 pc.
- oil 6 tbsp.
- vegetable broth 800 ml.
- sliced almonds 6 tbsp.
- fresh parsley 15 g.
- fresh dill 10 g.
- puff pastry 1 pc.
- salt pinch
- white ground pepper pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius (top/bottom heat).
- 2. Cut the onion in half and peel it.
- 3. Roughly chop the onion.
- 4. Remove the outer leaves from the cauliflower.
- 5. Wash the cauliflower thoroughly.
- 6. Divide the cauliflower into small florets.
- 7. Peel the apple.
- 8. Halve the apple.
- 9. Remove the core from the apple halves.
- 10. Dice the apple into small cubes.
- 11. Heat the oil in a pot over medium heat.
- 12. Sauté the onions for about 2 minutes.
- 13. Add the cauliflower florets and apple cubes to the pot.
- 14. Sauté the vegetables and apple for another 3 minutes until they look pale.
- 15. Deglaze the mixture with the broth.
- 16. Let the soup simmer for about 20 minutes.
- 17. Heat a pan over medium heat.
- 18. Toast the almond flakes without fat for about 2 minutes until golden brown.
- 19. Wash the parsley and dill.
- 20. Shake the herbs dry.
- 21. Remove the thick stems from the herbs.
- 22. Place the herbs, 4 tablespoons of oil, and 2 tablespoons of the toasted almonds in a tall container.
- 23. Blend the mixture until smooth.
- 24. Roll out the puff pastry on a work surface.
- 25. Cut the dough lengthwise into 4 strips, each about 6 cm wide.
- 26. Spread pesto on each dough strip.
- 27. Fold each strip lengthwise.
- 28. Twist the folded strips.
- 29. Thread the dough strips onto a wooden skewer in a snake-like shape.
- 30. Ensure the strips get smaller towards the tip.
- 31. Place the puff pastry trees on a baking sheet lined with parchment paper.
- 32. Bake the trees in the oven for about 15 minutes.
- 33. Blend the cauliflower soup in the pot until smooth.
- 34. Season the soup with salt and pepper.
- 35. Serve the soup in plates.
- 36. Sprinkle the soup with the remaining toasted almonds.
- 37. Serve the soup with the puff pastry trees.
