🍽️ Crispy Cauliflower Pizza

Ingredients
- Salt pinch
- Cauliflower 1 pc.
- Eggs 2 pcs.
- Emmental cheese block 200 g
- Pepper, black ground pinch
- Basil, fresh 20 g
- Rosemary, fresh 10 g
- Tomatoes, chopped 425 g
- Vine tomatoes 2 pcs.
- Olives, black 60 g
- Black Forest ham 4 slices
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Bring two liters of salted water to a boil in a pot and cover it.
- 3. Wash the cauliflower, cut off the hard stem at the bottom, and divide it into small florets.
- 4. Cook the florets (approx. 400 grams) for about five minutes in the boiling salted water.
- 5. Drain the cauliflower through a sieve and rinse it briefly with cold water.
- 6. Let the cauliflower drain well and allow it to cool down.
- 7. Puree the cooled cauliflower together with the eggs and 140 grams of cheese in a food processor or a tall container until smooth.
- 8. Season the mixture with pepper and a pinch of salt.
- 9. Divide the mixture onto two baking sheets lined with baking paper and shape them into two pizza bases, each approx. 25 centimeters in diameter.
- 10. Press the bases down slightly with a spoon.
- 11. Bake the bases one after the other in the preheated oven at 180 degrees for approx. 15 to 17 minutes until they brown slightly.
- 12. Wash the herbs meanwhile and pat them dry.
- 13. Pluck the leaves or needles from the herbs.
- 14. Set aside half of the basil.
- 15. Finely chop the remaining part of the basil together with the rosemary.
- 16. Mix the chopped tomatoes with the chopped herbs in a bowl.
- 17. Season the tomato mixture with salt and pepper.
- 18. Grate the remaining cheese finely.
- 19. Wash the tomatoes and slice them.
- 20. Drain the olives and slice them into rings.
- 21. Cut the ham into strips.
- 22. Spread the tomato sauce over the pre-baked pizza bases.
- 23. Sprinkle the remaining cheese over it.
- 24. Top the pizzas with ham, tomato slices, and olives.
- 25. Bake the pizzas one after the other in the hot oven at the same temperature for about 10 minutes.
- 26. Cut the finished pizza into pieces.
- 27. Garnish the pizza with the remaining basil and serve it.
