🍽️ Crispy Cauliflower Wings from the Air Fryer

Ingredients
- Spelt flour, Type 630 100 g
- Cayenne pepper Pinch
- Oat cream 150 ml
- Soy sauce 1 tsp
- Garlic cloves 1 pc
- Coriander, fresh 5 g
- Chives, fresh 10 g
- Vegan salad mayonnaise 250 ml
- Salt Pinch
- Cauliflower 600 g
Instructions
- 1. Whisk spelt flour, cayenne pepper, oat cream, and soy sauce in a bowl with a whisk until a smooth batter forms.
- 2. Let the batter rest and swell for about 15 minutes.
- 3. Peel the garlic clove and chop it finely.
- 4. Wash the cilantro and chives and pat them dry.
- 5. Pluck the cilantro leaves and chop them.
- 6. Cut the chives into small rings.
- 7. In a separate bowl, mix the chopped garlic and herbs with mayonnaise and about 5 tablespoons of water.
- 8. Season the dip with salt and adjust to taste.
- 9. Pluck the young leaves from the cauliflower.
- 10. Divide the cauliflower into small florets.
- 11. Wash the florets and young leaves and let them drain.
- 12. Cut a piece of baking paper to fit the air fryer basket and place it inside.
- 13. Dip about half of the cauliflower florets one by one into the batter.
- 14. Let the excess batter drip off briefly.
- 15. Place the breaded florets on the paper in the basket.
- 16. Fry the florets at 160 degrees Celsius for 5 minutes.
- 17. Turn the florets over.
- 18. Fry them for another 5 minutes at the same temperature.
- 19. Remove the finished florets from the basket.
- 20. Prepare the young leaves and the remaining florets in the same way.
- 21. Serve the cauliflower wings with the dip.
