  1. 1. Preheat the oven to 220 degrees Celsius (top and bottom heat).
  2. 2. Fill a large pot with about 4 liters of water and add salt.
  3. 3. Bring the salted water to a boil and cover the pot.
  4. 4. Thoroughly wash the cauliflower and remove the hard core.
  5. 5. Break the cauliflower into large florets.
  6. 6. Add the florets to the boiling salted water.
  7. 7. Cook the florets for 5 to 7 minutes until they are tender but still firm to the bite.
  8. 8. Note: Blanching means cooking food briefly in boiling water.
  9. 9. Heat oil in a frying pan over medium to high heat.
  10. 10. Fry the bacon for about 4 minutes until crispy.
  11. 11. Put sour cream, the crispy bacon, and the Gouda cheese into a bowl.
  12. 12. Mix the ingredients for the sauce well together.
  13. 13. Season the sauce with salt and pepper to taste.
  14. 14. Drain the cauliflower.
  15. 15. Place the cauliflower in a baking dish.
  16. 16. Spread the sauce evenly over the cauliflower.
  17. 17. Bake the gratin for about 15 minutes in the oven.
  18. 18. Wash the chives thoroughly.
  19. 19. Dry the chives with a cloth.
  20. 20. Cut the chives into fine rings.
  21. 21. Carefully remove the finished gratin from the oven.
  22. 22. Sprinkle the chive rings over the dish.
  23. 23. Serve the gratin immediately and enjoy your meal.
