🍽️ Creamy Cauliflower Mac and Cheese Bake

Ingredients
- Cauliflower 0.5 pc.
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Thyme, fresh 10 g
- Organic Lemon 1 pc.
- Breadcrumbs 100 g
- Olive oil 70 ml
- Salt pinch
- Macaroni 500 g
- Butter 4 tbsp
- Wheat flour, Type 405 2 tbsp
- Milk 400 ml
- Cheddar sliced cheese 300 g
- Mustard 1 tbsp
- Pepper, black ground pinch
- Nutmeg, ground pinch
- Parmesan, grated 5 tbsp
Instructions
- 1. Preheat your oven to 180 degrees Celsius fan-forced.
- 2. Thoroughly wash the cauliflower.
- 3. Separate the cauliflower into small florets.
- 4. Roughly chop off the hard core of the cauliflower.
- 5. Halve the onion and dice it into small cubes.
- 6. Peel the garlic clove and chop it finely.
- 7. Wash the fresh thyme sprigs.
- 8. Dry the thyme leaves.
- 9. Carefully pick the leaves off the woody stems.
- 10. Rinse the lemon under hot water.
- 11. Grate about one teaspoon of the orange zest.
- 12. Take a small bowl.
- 13. Add the chopped garlic to the bowl.
- 14. Add the thyme leaves.
- 15. Add the lemon zest.
- 16. Sprinkle the breadcrumbs into the bowl.
- 17. Drizzle the olive oil over the mixture.
- 18. Mix all the topping ingredients well together.
- 19. Fill a large pot with about five liters of water.
- 20. Salt the water generously.
- 21. Bring the water to a boil.
- 22. Add the macaroni to the boiling water.
- 23. Cook the pasta for about eight minutes.
- 24. Check if the pasta is al dente (firm to the bite).
- 25. Add the cauliflower after about five minutes of cooking time.
- 26. Cook the pasta and cauliflower together until done.
- 27. Pour the pasta and cauliflower mixture into a colander.
- 28. Let the mixture drain well.
- 29. Take a clean pot.
- 30. Heat the butter in the pot over high heat.
- 31. Fry the onion cubes for about one minute.
- 32. Dust the onions with flour.
- 33. Stir the mixture to distribute the flour.
- 34. Deglaze the onions with milk.
- 35. Let the sauce simmer for about eight minutes.
- 36. Check if the sauce has thickened slightly.
- 37. Turn the stove heat to low.
- 38. Add the grated cheese to the sauce.
- 39. Stir until the cheese is completely melted.
- 40. Stir the mustard into the cheese sauce.
- 41. Season the sauce with salt.
- 42. Season the sauce with pepper.
- 43. Grate some fresh nutmeg over the sauce.
- 44. Return the drained pasta and cauliflower to the pot.
- 45. Mix the pasta and cauliflower with the cheese sauce.
- 46. Taste the mixture and check the flavor.
- 47. Take a baking dish.
- 48. Place the pasta and cauliflower mixture into the dish.
- 49. Sprinkle grated parmesan over the top.
- 50. Distribute the prepared breadcrumb topping evenly.
- 51. Place the baking dish in the preheated oven.
- 52. Bake the dish for about ten to fifteen minutes.
- 53. Remove the finished cauliflower mac and cheese from the oven.
- 54. Serve the dish hot.
