🍰 Refreshing Blueberry Soup with Airy Dumplings

Ingredients
- Organic Limes 1 pc.
- Blueberries, fresh 1 kg
- Apple juice 400 ml
- Sugar 75 g
- Salt pinch
- Icing sugar 40 g
- Eggs 2 pc.
Instructions
- 1. Wash the lime thoroughly.
- 2. Cut the lime peel into thin strips.
- 3. Cut the lime in half.
- 4. Squeeze out the lime juice.
- 5. Clean the blueberries thoroughly.
- 6. Sort the blueberries to remove any damaged fruit.
- 7. Put the apple juice and lime juice into a pot.
- 8. Add 75 grams of sugar to the juices.
- 9. Bring the mixture to a boil.
- 10. Add the blueberries to the pot.
- 11. Place the lid on the pot.
- 12. Let the berries cook for about 5 minutes.
- 13. Puree the soup until smooth.
- 14. Strain the soup through a fine sieve.
- 15. Adjust the sweetness with extra sugar if needed.
- 16. Let the soup cool down.
- 17. Place the soup in the refrigerator.
- 18. Chill the soup thoroughly.
- 19. Put water into a pot.
- 20. Add a little salt to the water.
- 21. Bring the water to a boil.
- 22. Sift the powdered sugar.
- 23. Separate the eggs into egg whites and egg yolks.
- 24. Put the egg whites into a bowl.
- 25. Whip the egg whites until stiff.
- 26. Stir the powdered sugar into the egg whites gradually.
- 27. Take two spoons.
- 28. Scoop small dumplings from the egg mixture.
- 29. Slide the dumplings into the bubbling water.
- 30. Cook the dumplings for about 1 to 2 minutes.
- 31. Turn the dumplings once while cooking.
- 32. Drain the dumplings.
- 33. Place the dumplings immediately on the cold blueberry soup.
- 34. Garnish the soup with the lime strips.
- 35. Serve the dish.
