🍽️ Blueberry Chutney

Ingredients
- blueberries, fresh 500 g
- onions, yellow 1 pc.
- rosemary, fresh 10 g
- oil 2 tbsp
- cinnamon 1 tsp
- salt pinch
- cayenne pepper pinch
- brown sugar 75 g
- balsamic vinegar, light 50 ml
- lemons 1 pc.
Instructions
- 1. Wash the blueberries thoroughly and remove any damaged ones. Halve the onions, peel them, and cut into small pieces. Rinse the rosemary, pat dry, remove the needles from the stems, and chop finely.
- 2. Heat the oil in a pot over medium heat and sauté the onion pieces for about 1–2 minutes. Then add the blueberries, rosemary, cinnamon, 1 tsp salt, ¼ tsp cayenne pepper, sugar, and vinegar, and bring everything to a boil.
- 3. Let the chutney simmer gently for approx. 15–20 minutes, stirring occasionally at first. As it thickens towards the end of the cooking time, stir frequently to prevent it from sticking.
- 4. Squeeze the lemon. Season with salt, cayenne pepper, and possibly lemon juice, then fill the hot blueberry chutney into clean, hot-rinsed jars. Seal and let cool. Enjoy your meal!
