  1. 1. Preheat the oven to 220 °C (convection). Take the puff pastry out of the fridge and roll it out on two baking sheets along with the baking paper.
  2. 2. Cut the onions in half, peel them, and slice them into thin strips. Wash the zucchini and cut off the ends. Wash the pepper, cut it in half, remove the stem and seeds, and cut both into cubes of about 1 cm.
  3. 3. Cut the mozzarella into cubes of approximately 1 cm. In a bowl, mix the prepared vegetables with the tomatoes, mozzarella, sugar, herbs of Provence, salt, and 2 tbsp oil.
  4. 4. Cut each puff pastry sheet in half across the width, fold the edges about 1 cm inward, and brush with a total of 1 tbsp oil. Let the vegetable and mozzarella mixture drain in a sieve.
  5. 5. Evenly top the puff pastry pizzas around the edges with the vegetable-mozzarella mixture and bake in the oven for about 20 minutes, swapping the baking sheets after about 10 minutes.
  6. 6. Carefully take the puff pastry pizzas out of the oven, arrange them on plates, and serve. Enjoy your meal!
