  1. 1. Preheat the oven to 240 °C (top/bottom heat). Halve the onions and cut them into strips. In a bowl, mix crème fraîche with mustard, salt, and pepper. Roll out the puff pastry and cut it lengthwise once and crosswise three times to create 8 squares.
  2. 2. Spread the crème fraîche on the puff pastry pieces. Top with onions and sprinkle with thyme. Place them on a baking sheet lined with parchment paper and bake in the oven for about 15 minutes until golden brown.
  3. 3. Meanwhile, wash the arugula and spin it dry. Combine it in a bowl with olive oil.
  4. 4. Remove the puff pastry tartlets from the oven and top with Serrano ham and arugula. Enjoy your meal! Tip: The tartlets can be served warm or cold.
