🍰 Puff Pastry Blackberry Cake with Coconut Flakes

Ingredients
- Puff pastry 3 pcs
- Blackberries, fresh 400 g
- Whipping cream 400 g
- Icing sugar 60 g
- Whipping cream stabilizer 2 tsp
- Coconut flakes 4 tbsp
Instructions
- 1. Preheat the oven to 180 °C (convection). Roll out the puff pastry and cut out round shapes. Cut one of the round dough pieces into 12 pieces for the tart. Arrange everything on trays lined with baking paper and bake for about 10–12 minutes until golden yellow. Let cool.
- 2. Wash the blackberries thoroughly and puree one third of them in a tall container.
- 3. In a bowl, beat the cream stiff with a hand mixer and whisk. Then add 50 g icing sugar and whipping cream stabilizer and mix well. Divide the whipped cream and mix one half with the blackberry puree. Carefully combine the other half with coconut flakes.
- 4. Spread one puff pastry with the blackberry cream. Place the second puff pastry on top and spread with the coconut cream. Garnish with the puff pastry pieces and whole blackberries and serve dusted with icing sugar. Enjoy your meal!
