  1. 1. Place a baking sheet in the oven and preheat both to 200 degrees Celsius using top and bottom heat.
  2. 2. Slice the Camembert cheese into thin pieces.
  3. 3. Rinse the thyme under running water and shake off excess moisture.
  4. 4. Carefully pick the small thyme leaves off the woody stems.
  5. 5. Wash the pears thoroughly.
  6. 6. Cut the pears into quarters and remove the hard core in the center.
  7. 7. Cut the pear halves into very thin wedges.
  8. 8. Cut the radicchio into quarters and cut out the hard base at the bottom.
  9. 9. Slice the radicchio into thin strips.
  10. 10. Rinse the cut radicchio strips thoroughly one more time.
  11. 11. Dry the radicchio using a salad spinner or a kitchen towel.
  12. 12. Unroll the puff pastry along with the baking paper attached to it.
  13. 13. Prick the dough surface several times with a fork to prevent it from rising.
  14. 14. Mix mustard, honey, and crème fraîche in a small bowl.
  15. 15. Spread the sauce evenly over the dough, but leave a border of about one centimeter free.
  16. 16. Season the sauce generously with salt and black pepper.
  17. 17. Sprinkle the fresh thyme leaves evenly over the dough.
  18. 18. Distribute the pear wedges evenly over the flammkuchen.
  19. 19. Place the radicchio evenly over the pears.
  20. 20. Place the Camembert slices evenly on top of the toppings last.
  21. 21. Carefully lift the flammkuchen from the baking paper and place it on the hot baking sheet.
  22. 22. Slide the sheet into the lower third of the preheated oven.
  23. 23. Bake the flammkuchen for about 15 minutes.
  24. 24. Swap the position of the baking sheets in the oven when half the baking time has passed.
  25. 25. Take the finished flammkuchen out of the oven.
  26. 26. Cut the flammkuchen into bite-sized pieces.
  27. 27. Serve the flammkuchen immediately while warm.
