🍽️ Bitter-sweet Flammkuchen with Radicchio, Pear and Camembert

Ingredients
- Camembert 200 g
- Thyme, fresh 10 g
- Pears 2 pcs.
- Radicchio 1 pc.
- Puff pastry 2 pcs.
- Mustard 2 tsp
- Honey 2 tsp
- crème fraîche 300 g
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Place a baking sheet in the oven and preheat both to 200 degrees Celsius using top and bottom heat.
- 2. Slice the Camembert cheese into thin pieces.
- 3. Rinse the thyme under running water and shake off excess moisture.
- 4. Carefully pick the small thyme leaves off the woody stems.
- 5. Wash the pears thoroughly.
- 6. Cut the pears into quarters and remove the hard core in the center.
- 7. Cut the pear halves into very thin wedges.
- 8. Cut the radicchio into quarters and cut out the hard base at the bottom.
- 9. Slice the radicchio into thin strips.
- 10. Rinse the cut radicchio strips thoroughly one more time.
- 11. Dry the radicchio using a salad spinner or a kitchen towel.
- 12. Unroll the puff pastry along with the baking paper attached to it.
- 13. Prick the dough surface several times with a fork to prevent it from rising.
- 14. Mix mustard, honey, and crème fraîche in a small bowl.
- 15. Spread the sauce evenly over the dough, but leave a border of about one centimeter free.
- 16. Season the sauce generously with salt and black pepper.
- 17. Sprinkle the fresh thyme leaves evenly over the dough.
- 18. Distribute the pear wedges evenly over the flammkuchen.
- 19. Place the radicchio evenly over the pears.
- 20. Place the Camembert slices evenly on top of the toppings last.
- 21. Carefully lift the flammkuchen from the baking paper and place it on the hot baking sheet.
- 22. Slide the sheet into the lower third of the preheated oven.
- 23. Bake the flammkuchen for about 15 minutes.
- 24. Swap the position of the baking sheets in the oven when half the baking time has passed.
- 25. Take the finished flammkuchen out of the oven.
- 26. Cut the flammkuchen into bite-sized pieces.
- 27. Serve the flammkuchen immediately while warm.
