  1. 1. Preheat your oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Carefully separate the eggs so that the egg whites and yolks end up in separate bowls.
  3. 3. Beat the egg whites stiff using a hand mixer with a whisk attachment.
  4. 4. Slowly stir in 75 grams of sugar into the egg whites.
  5. 5. Continue beating until the mixture looks creamy and shiny.
  6. 6. In the second bowl, beat the egg yolks with the remaining sugar and a pinch of salt until creamy.
  7. 7. Mix flour, starch, and baking powder in a separate bowl.
  8. 8. Sift the flour mixture over the egg yolk mixture.
  9. 9. Gently fold in half of the egg whites into the mixture.
  10. 10. Stir in the remaining egg whites briefly until incorporated.
  11. 11. Place a piece of baking paper on the bottom of a 26-centimeter springform pan.
  12. 12. Place the ring of the pan on top and close it securely.
  13. 13. Fill the biscuit batter evenly into the prepared pan.
  14. 14. Smooth the surface of the batter.
  15. 15. Bake the dough for about 25 minutes in the preheated oven.
  16. 16. Place a drop of oil in the center of a baking sheet.
  17. 17. Press a piece of baking paper onto the drop so that it stays in place.
  18. 18. Spread the biscuit batter evenly over the oiled baking paper.
