Ingredients
- Eggs 3 pcs.
- Sugar 125 g
- Salt pinch
- Wheat flour, Type 405 75 g
- Cornstarch 50 g
- Baking powder 1 tsp.
Instructions
- 1. Preheat your oven to 180 degrees Celsius with top and bottom heat.
- 2. Carefully separate the eggs so that the egg whites and yolks end up in separate bowls.
- 3. Beat the egg whites stiff using a hand mixer with a whisk attachment.
- 4. Slowly stir in 75 grams of sugar into the egg whites.
- 5. Continue beating until the mixture looks creamy and shiny.
- 6. In the second bowl, beat the egg yolks with the remaining sugar and a pinch of salt until creamy.
- 7. Mix flour, starch, and baking powder in a separate bowl.
- 8. Sift the flour mixture over the egg yolk mixture.
- 9. Gently fold in half of the egg whites into the mixture.
- 10. Stir in the remaining egg whites briefly until incorporated.
- 11. Place a piece of baking paper on the bottom of a 26-centimeter springform pan.
- 12. Place the ring of the pan on top and close it securely.
- 13. Fill the biscuit batter evenly into the prepared pan.
- 14. Smooth the surface of the batter.
- 15. Bake the dough for about 25 minutes in the preheated oven.
- 16. Place a drop of oil in the center of a baking sheet.
- 17. Press a piece of baking paper onto the drop so that it stays in place.
- 18. Spread the biscuit batter evenly over the oiled baking paper.
