🍰 Egg Liqueur Cream Roll with Fresh Strawberries

Ingredients
- Eggs 3 pcs.
- sugar 150 g
- wheat flour, Type 405 100 g
- cornstarch 20 g
- baking powder 0.5 tsp
- strawberries 600 g
- heavy cream 500 ml
- cream stabilizer 30 g
- powdered sugar 50 g
- egg liqueur 200 ml
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Separate the eggs so you have distinct yolks and whites.
- 3. Whisk the egg yolks with 125 grams of sugar in a bowl until creamy.
- 4. Whip the egg whites in a separate bowl using a hand mixer until stiff.
- 5. Slowly stir in the remaining sugar into the egg whites until they are shiny and firm.
- 6. Mix flour, starch, and baking powder in a small bowl.
- 7. Sift the flour mixture over the egg yolk mixture.
- 8. Stir the ingredients carefully but thoroughly.
- 9. Gently fold the stiffly whipped egg whites into the batter.
- 10. Line a baking tray with baking paper.
- 11. Spread the batter evenly across the tray.
- 12. Bake the dough in the preheated oven for about 15 minutes.
- 13. Remove the sponge from the oven and place it on a work surface along with the baking paper.
- 14. Invert the sponge onto a clean kitchen towel that has been dusted with sugar.
- 15. Carefully peel off the baking paper.
- 16. Roll up the warm sponge along with the kitchen towel.
- 17. Let the roll cool down completely.
- 18. Wash the strawberries under running water.
- 19. Remove the green leafy tops from the strawberries.
- 20. Slice the strawberries into thin pieces.
- 21. Whip the cream with cream stabilizer and powdered sugar in a bowl until stiff.
- 22. Stir the egg liqueur into the finished cream.
- 23. Carefully unroll the cooled sponge.
- 24. Spread two-thirds of the cream evenly over the sponge.
- 25. Top the cream with almost half of the strawberry slices.
- 26. Roll the sponge up tightly again.
- 27. Place the roll onto a serving plate.
- 28. Coat the outside of the roll with the remaining cream.
- 29. Place the roll in the refrigerator for a while to set.
- 30. Garnish the finished roll with the remaining strawberries.
- 31. Serve the roll on a cake platter.
