  1. 1. Mix butter, 50 grams of sugar, a pinch of salt, one egg, flour, and baking powder in a bowl until you have a smooth dough.
  2. 2. Wrap the dough tightly in cling film and put it in the fridge for a while.
  3. 3. Preheat the oven to 200 degrees Celsius (convection mode).
  4. 4. Wash the lemon and orange thoroughly.
  5. 5. Grate about one teaspoon of fine zest from the lemon and one teaspoon from the orange.
  6. 6. Cut the lemon in half and squeeze out the juice.
  7. 7. Mix the citrus zest, 50 grams of sugar, a quarter teaspoon of cinnamon, and some ground nutmeg in a small bowl.
  8. 8. Peel the pears and cut them into quarters.
  9. 9. Remove the core from the pear quarters.
  10. 10. Slice the pears into thin slices.
  11. 11. Drizzle the pear slices with some lemon juice.
  12. 12. Take three quarters of the dough out of the fridge and roll it out on a lightly floured work surface.
  13. 13. Grease a tart pan and line it with the dough.
  14. 14. Prick the base several times with a fork.
  15. 15. Spread three teaspoons of the citrus zest-sugar mixture evenly over the dough base.
  16. 16. Arrange the pear slices neatly and evenly on the tart.
  17. 17. Sprinkle raisins over the pears.
  18. 18. Dust the tart with the remaining sugar mixture.
  19. 19. Take the remaining dough and roll it out on the floured surface.
  20. 20. Cut out small stars from the dough.
  21. 21. Decorate the tart by distributing the dough stars.
  22. 22. Lightly brush the surface of the tart with milk.
  23. 23. Put the tart in the preheated oven and bake it for about 20 minutes.
  24. 24. Reduce the oven temperature to 180 degrees Celsius.
  25. 25. Bake the tart for another 25 minutes.
  26. 26. Take the tart out of the oven and let it cool down.
  27. 27. Dust the finished tart with powdered sugar before serving.
