🍰 Crispy Pear Tart with Citrus Notes

Ingredients
- butter 225 g
- brown sugar 100 g
- salt pinch
- eggs 1 pc.
- wheat flour, type 405 225 g
- baking powder 1 tsp
- lemons 1 pc.
- oranges 1 pc.
- cinnamon 0.5 tsp
- nutmeg, ground pinch
- pears 5 pc.
- raisins 40 g
- milk 1 tbsp
- powdered sugar 1 tbsp
Instructions
- 1. Mix butter, 50 grams of sugar, a pinch of salt, one egg, flour, and baking powder in a bowl until you have a smooth dough.
- 2. Wrap the dough tightly in cling film and put it in the fridge for a while.
- 3. Preheat the oven to 200 degrees Celsius (convection mode).
- 4. Wash the lemon and orange thoroughly.
- 5. Grate about one teaspoon of fine zest from the lemon and one teaspoon from the orange.
- 6. Cut the lemon in half and squeeze out the juice.
- 7. Mix the citrus zest, 50 grams of sugar, a quarter teaspoon of cinnamon, and some ground nutmeg in a small bowl.
- 8. Peel the pears and cut them into quarters.
- 9. Remove the core from the pear quarters.
- 10. Slice the pears into thin slices.
- 11. Drizzle the pear slices with some lemon juice.
- 12. Take three quarters of the dough out of the fridge and roll it out on a lightly floured work surface.
- 13. Grease a tart pan and line it with the dough.
- 14. Prick the base several times with a fork.
- 15. Spread three teaspoons of the citrus zest-sugar mixture evenly over the dough base.
- 16. Arrange the pear slices neatly and evenly on the tart.
- 17. Sprinkle raisins over the pears.
- 18. Dust the tart with the remaining sugar mixture.
- 19. Take the remaining dough and roll it out on the floured surface.
- 20. Cut out small stars from the dough.
- 21. Decorate the tart by distributing the dough stars.
- 22. Lightly brush the surface of the tart with milk.
- 23. Put the tart in the preheated oven and bake it for about 20 minutes.
- 24. Reduce the oven temperature to 180 degrees Celsius.
- 25. Bake the tart for another 25 minutes.
- 26. Take the tart out of the oven and let it cool down.
- 27. Dust the finished tart with powdered sugar before serving.
