  1. 1. Soak the gelatin in a bowl with cold water.
  2. 2. Peel the pears.
  3. 3. Quarter the pears and remove the core.
  4. 4. Cut the fruit flesh into small cubes.
  5. 5. Place the pears, white wine, sugar, and vanilla sugar in a pot.
  6. 6. Bring the mixture to a boil.
  7. 7. Cook the pears for about 5 minutes over medium heat until soft.
  8. 8. Let the mixture cool down briefly.
  9. 9. Puree the pears together with the cooking liquid.
  10. 10. Stir the crème fraîche into the pear mixture.
  11. 11. Squeeze the soaked gelatin well.
  12. 12. Dissolve the gelatin in the pear cream.
  13. 13. Place the pear cream in the refrigerator.
  14. 14. Wait until the cream starts to set.
  15. 15. Place the cream in a separate bowl.
  16. 16. Whip the cream stiffly using a hand mixer with the whisk attachment.
  17. 17. Gently fold the whipped cream into the pear cream.
  18. 18. Chill the mousse with the pears for at least 3 hours.
  19. 19. Warm a tablespoon.
  20. 20. Scoop the mousse portion by portion using the warm spoon.
  21. 21. Plate the mousse.
