🍰 Fruity Pear Mousse

Ingredients
- leaf gelatin 3 pcs.
- pears 500 g
- dry white wine 100 ml
- sugar 2 tbsp
- vanilla sugar 2 tsp
- crème fraîche 200 g
- whipping cream 200 g
Instructions
- 1. Soak the gelatin in a bowl with cold water.
- 2. Peel the pears.
- 3. Quarter the pears and remove the core.
- 4. Cut the fruit flesh into small cubes.
- 5. Place the pears, white wine, sugar, and vanilla sugar in a pot.
- 6. Bring the mixture to a boil.
- 7. Cook the pears for about 5 minutes over medium heat until soft.
- 8. Let the mixture cool down briefly.
- 9. Puree the pears together with the cooking liquid.
- 10. Stir the crème fraîche into the pear mixture.
- 11. Squeeze the soaked gelatin well.
- 12. Dissolve the gelatin in the pear cream.
- 13. Place the pear cream in the refrigerator.
- 14. Wait until the cream starts to set.
- 15. Place the cream in a separate bowl.
- 16. Whip the cream stiffly using a hand mixer with the whisk attachment.
- 17. Gently fold the whipped cream into the pear cream.
- 18. Chill the mousse with the pears for at least 3 hours.
- 19. Warm a tablespoon.
- 20. Scoop the mousse portion by portion using the warm spoon.
- 21. Plate the mousse.
