🍰 Moist Pear and Coconut Cake

Ingredients
- Pears 5 pcs
- margarine, vegan 200 g
- Brown sugar 200 g
- Salt pinch
- Vanilla sugar 2 tsp
- Eggs 4 pcs
- Wheat flour, Type 405 330 g
- Baking powder 3 tsp
- Coconut milk 150 ml
- Powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Peel the pears.
- 3. Cut the pears into quarters.
- 4. Remove the core and seeds from the pear pieces.
- 5. Dice the pears into small cubes.
- 6. Add margarine, sugar, salt, and vanilla sugar to a large bowl.
- 7. Beat the ingredients until creamy using a hand mixer and a whisk.
- 8. Add the eggs one by one into the mixture.
- 9. Mix flour and baking powder in a separate small bowl.
- 10. Stir the flour mixture quickly with the coconut milk into the egg mixture.
- 11. Gently fold the diced pears into the batter.
- 12. Pour the batter into a greased springform pan.
- 13. Smooth the surface of the batter.
- 14. Bake the cake in the oven for about 50 to 60 minutes.
- 15. Check if the cake is baked golden brown.
- 16. Cover the surface of the cake with aluminum foil at the end of the baking time if it is getting too dark.
- 17. Let the cake cool down completely.
- 18. Dust the cooled cake with powdered sugar.
- 19. Serve the cake and enjoy it.
