🍰 Pear Compote with Vanilla and Almonds

Ingredients
- Pears 8 pcs
- Sugar 50 g
- Apple juice, cloudy 50 ml
- White wine, dry 50 ml
- Vanilla pod 1 pcs
- Almonds, sliced 50 g
- Whipping cream 100 ml
Instructions
- 1. Peel the pears, remove the stems and seeds, and cut them into small pieces. In a pot, caramelize the sugar over medium heat. Then add the pear pieces, stir well, and deglaze with juice and wine.
- 2. Split the vanilla pod lengthwise and scrape out the seeds with the knife's back. Add both the seeds and the pod to the pears. Let the compote simmer on the lowest setting for about 15 minutes.
- 3. Meanwhile, heat a pan over medium heat and toast the almonds without fat for about 5 minutes. In a bowl, whip the cream with a hand mixer until stiff. Remove the vanilla pod, fold the toasted almonds into the pear compote, and serve in glasses.
