🍰 Crispy Pear-Mango Casserole with Walnuts

Ingredients
- walnut kernels 100 g
- wheat flour, Type 405 2 tbsp
- pears 3 pcs
- mango 1 pcs
- oranges 1 pcs
- eggs 4 pcs
- salt pinch
- sugar 80 g
- vanilla sugar 40 g
- crème fraîche 50 ml
- butter 20 g
- powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Place the walnuts in a tall container.
- 3. Grind the nuts finely using a hand blender.
- 4. Mix the ground walnuts with the flour.
- 5. Peel the pears.
- 6. Remove the cores from the pears.
- 7. Cut the pears into wedges.
- 8. Peel the mango.
- 9. Separate the mango flesh from the pit.
- 10. Cut the mango flesh into wedges as well.
- 11. Halve the orange.
- 12. Squeeze the juice from the orange.
- 13. Place the pear and mango pieces into a baking dish.
- 14. Drizzle the fruit with the orange juice.
- 15. Separate the eggs. Keep the egg whites and yolks apart.
- 16. Place the egg whites in a bowl.
- 17. Add a pinch of salt to the egg whites.
- 18. Beat the egg whites stiffly using a hand mixer and whisk.
- 19. Place the egg yolks in a separate bowl.
- 20. Beat the egg yolks creamy with sugar.
- 21. Mix in the vanilla sugar.
- 22. Fold the walnut and flour mixture into the yolk mixture.
- 23. Mix in the crème fraîche.
- 24. Gently fold the egg whites into the fruit butter mixture.
- 25. Pour the egg mixture over the fruit in the baking dish.
- 26. Dot the casserole with small pieces of butter.
- 27. Bake the casserole in the oven for about 45 minutes.
- 28. Remove the casserole from the oven when it is golden brown.
- 29. Dust the finished casserole with powdered sugar.
- 30. Serve the casserole hot or warm.
