  2. 2. Place the walnuts in a tall container.
  3. 3. Grind the nuts finely using a hand blender.
  4. 4. Mix the ground walnuts with the flour.
  5. 5. Peel the pears.
  6. 6. Remove the cores from the pears.
  7. 7. Cut the pears into wedges.
  8. 8. Peel the mango.
  9. 9. Separate the mango flesh from the pit.
  10. 10. Cut the mango flesh into wedges as well.
  11. 11. Halve the orange.
  12. 12. Squeeze the juice from the orange.
  13. 13. Place the pear and mango pieces into a baking dish.
  14. 14. Drizzle the fruit with the orange juice.
  15. 15. Separate the eggs. Keep the egg whites and yolks apart.
  16. 16. Place the egg whites in a bowl.
  17. 17. Add a pinch of salt to the egg whites.
  18. 18. Beat the egg whites stiffly using a hand mixer and whisk.
  19. 19. Place the egg yolks in a separate bowl.
  20. 20. Beat the egg yolks creamy with sugar.
  21. 21. Mix in the vanilla sugar.
  22. 22. Fold the walnut and flour mixture into the yolk mixture.
  23. 23. Mix in the crème fraîche.
  24. 24. Gently fold the egg whites into the fruit butter mixture.
  25. 25. Pour the egg mixture over the fruit in the baking dish.
  26. 26. Dot the casserole with small pieces of butter.
  27. 27. Bake the casserole in the oven for about 45 minutes.
  28. 28. Remove the casserole from the oven when it is golden brown.
  29. 29. Dust the finished casserole with powdered sugar.
