🍰 Juicy Pear and Hazelnut Cake with Cranberries

Ingredients
- Organic Limes 1 pc.
- Cranberries, dried 70 g
- Hazelnut kernels, whole 50 g
- Pears 3 pcs.
- Cinnamon 1 tsp
- Cardamom, ground pinch
- Butter 260 g
- Brown sugar 150 g
- Hazelnut kernels, ground 50 g
- Wheat flour, Type 405 375 g
- Baking powder 3 tsp
- Eggs 1 pc.
- Icing sugar 1 tbsp
Instructions
- 1. Preheat your oven to 180 degrees Celsius using top and bottom heat.
- 2. Cut the lime in half and squeeze out the juice.
- 3. Place the cranberries in a bowl and pour the lime juice over them to let them soak.
- 4. Coarsely chop the hazelnuts into small pieces.
- 5. Peel the pears and cut them into quarters.
- 6. Remove the cores from the pear quarters.
- 7. Dice the cored pears into small cubes.
- 8. Add the chopped hazelnuts and the diced pears to the bowl with the cranberries.
- 9. Sprinkle 0.5 teaspoons of cinnamon and a pinch of cardamom over the fruit and nut mixture.
- 10. Mix all the filling ingredients together thoroughly.
- 11. Set the prepared filling aside.
- 12. Cut 250 grams of butter into pieces and place them in a saucepan.
- 13. Melt the butter over low heat.
- 14. Let the melted butter cool down slightly until it is lukewarm.
- 15. Take a large mixing bowl and add sugar, ground nuts, flour, baking powder, and 0.5 teaspoons of cinnamon.
- 16. Mix the dry ingredients in the bowl briefly.
- 17. Pour the cooled melted butter into the bowl.
- 18. Use a hand mixer with dough hooks to beat the butter into the flour mixture.
- 19. Add one egg to the dough mixture.
- 20. Continue mixing the dough until it is smooth and homogeneous.
- 21. Take a 26-centimeter springform pan and grease it with 1 tablespoon of butter.
- 22. Take two-thirds of the dough and press it into the pan.
- 23. Press the dough up the sides to form a 2 to 3 centimeter high edge.
- 24. Spread the prepared cranberry-pear mixture evenly over the dough base.
- 25. Take the remaining dough and crumble it over the fruit filling.
- 26. Place the cake in the preheated oven.
- 27. Bake the cake for about 50 minutes.
- 28. Check after the time to see if the cake is baked golden brown.
- 29. Remove the cake from the oven and let it cool for a moment.
- 30. Carefully release the cake from the pan.
- 31. Dust the cake with powdered sugar before serving.
- 32. Serve the cake and enjoy it.
