  1. 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
  2. 2. Bring about 500 milliliters of water to a boil in a pot.
  3. 3. Pour the hot water over the almonds in a bowl.
  4. 4. Let the almonds soak in the water for 1 to 2 minutes.
  5. 5. Drain the almonds and squeeze the kernels out of their skins.
  6. 6. Halve 70 grams of the almonds lengthwise.
  7. 7. Finely chop the remaining almonds.
  8. 8. Cut the marzipan into small pieces.
  9. 9. Separate the egg into yolk and white.
  10. 10. Knead the egg white with the chopped almonds, marzipan, powdered sugar, and flour in a bowl to form a dough.
  11. 11. Lightly dust your hands with flour.
  12. 12. Form about 30 equal-sized balls from the dough.
  13. 13. Mix the egg yolk with one tablespoon of water in a small bowl.
  14. 14. Place the balls on a baking sheet lined with baking paper.
  15. 15. Brush the balls with the egg yolk and water mixture.
  16. 16. Press three almond halves onto each ball.
  17. 17. Bake the Bethmännchen in the oven for about 18 minutes until light yellow.
  18. 18. Let the baked balls cool down completely.
