🍰 Bake Heavenly Bethmännchen

Ingredients
- almonds, whole 140 g
- marzipan raw mass 200 g
- eggs 1 pc.
- powdered sugar 75 g
- wheat flour, Type 405 50 g
Instructions
- 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
- 2. Bring about 500 milliliters of water to a boil in a pot.
- 3. Pour the hot water over the almonds in a bowl.
- 4. Let the almonds soak in the water for 1 to 2 minutes.
- 5. Drain the almonds and squeeze the kernels out of their skins.
- 6. Halve 70 grams of the almonds lengthwise.
- 7. Finely chop the remaining almonds.
- 8. Cut the marzipan into small pieces.
- 9. Separate the egg into yolk and white.
- 10. Knead the egg white with the chopped almonds, marzipan, powdered sugar, and flour in a bowl to form a dough.
- 11. Lightly dust your hands with flour.
- 12. Form about 30 equal-sized balls from the dough.
- 13. Mix the egg yolk with one tablespoon of water in a small bowl.
- 14. Place the balls on a baking sheet lined with baking paper.
- 15. Brush the balls with the egg yolk and water mixture.
- 16. Press three almond halves onto each ball.
- 17. Bake the Bethmännchen in the oven for about 18 minutes until light yellow.
- 18. Let the baked balls cool down completely.
