  1. 1. Preheat the oven to 190 degrees Celsius with fan.
  2. 2. Place three quarters of the butter in a small saucepan.
  3. 3. Heat the butter over high heat until it turns brown but does not burn.
  4. 4. Remove the saucepan from the heat.
  5. 5. Scrape the browned bits from the bottom of the pan with a rubber spatula.
  6. 6. Stir in the remaining cold butter into the hot melted butter.
  7. 7. Let the butter mixture cool down.
  8. 8. Mix flour, salt, cinnamon, baking powder, and brown sugar in a medium bowl.
  9. 9. Set the dry ingredient mixture aside.
  10. 10. Beat eggs, sugar, and vanilla extract in a large bowl with a hand mixer for about 5 minutes until foamy and firm.
  11. 11. Combine the dry ingredients with the cooled butter.
  12. 12. Fold the butter-flour mixture into the egg mixture.
  13. 13. Coarsely chop the chocolate couverture.
  14. 14. Stir the chopped chocolate into the dough.
  15. 15. Divide the dough into 16 mounds using a spoon.
  16. 16. Distribute the dough portions onto two baking sheets lined with baking paper.
  17. 17. Bake the cookies for about 12 to 15 minutes until golden brown.
  18. 18. Remove the baking sheets from the oven.
  19. 19. Let the cookies cool down.
