Ingredients
- butter 160 g
- Spelt flour, Type 630 100 g
- Wheat flour Type 550 100 g
- Salt 0.5 tsp
- Cinnamon 0.5 tsp
- Baking powder 0.5 tsp
- Brown sugar 200 g
- Eggs 2 pcs
- Sugar 50 g
- Vanilla extract 0.5 tsp
- Couverture, dark 150 g
Instructions
- 1. Preheat the oven to 190 degrees Celsius with fan.
- 2. Place three quarters of the butter in a small saucepan.
- 3. Heat the butter over high heat until it turns brown but does not burn.
- 4. Remove the saucepan from the heat.
- 5. Scrape the browned bits from the bottom of the pan with a rubber spatula.
- 6. Stir in the remaining cold butter into the hot melted butter.
- 7. Let the butter mixture cool down.
- 8. Mix flour, salt, cinnamon, baking powder, and brown sugar in a medium bowl.
- 9. Set the dry ingredient mixture aside.
- 10. Beat eggs, sugar, and vanilla extract in a large bowl with a hand mixer for about 5 minutes until foamy and firm.
- 11. Combine the dry ingredients with the cooled butter.
- 12. Fold the butter-flour mixture into the egg mixture.
- 13. Coarsely chop the chocolate couverture.
- 14. Stir the chopped chocolate into the dough.
- 15. Divide the dough into 16 mounds using a spoon.
- 16. Distribute the dough portions onto two baking sheets lined with baking paper.
- 17. Bake the cookies for about 12 to 15 minutes until golden brown.
- 18. Remove the baking sheets from the oven.
- 19. Let the cookies cool down.
