🍰 Classic Berliners with Strawberry Filling

Ingredients
- Milk 80 ml
- Yeast, fresh 15 g
- Sugar 60 g
- Wheat flour, Type 405 280 g
- Salt Pinch
- butter 40 g
- Eggs 1 pc.
- Rapeseed oil 500 ml
- Strawberry jam 6 tbsp
Instructions
- 1. Warm the milk in a pot until it is lukewarm.
- 2. Pour the lukewarm milk into a bowl.
- 3. Crumble the yeast into the milk.
- 4. Add one tablespoon of sugar.
- 5. Stir the mixture until the yeast and sugar have dissolved.
- 6. Cover the bowl.
- 7. Let the yeast milk rest in a warm place for about 15 minutes.
- 8. Take a large bowl for the dough.
- 9. Add the remaining sugar to the bowl.
- 10. Add the flour to the bowl.
- 11. Add the salt to the bowl.
- 12. Add the cubed butter to the bowl.
- 13. Pour the yeast milk into the flour mixture.
- 14. Add the eggs to the bowl.
- 15. Knead the ingredients into a smooth dough.
- 16. Cover the bowl with a clean kitchen towel.
- 17. Let the dough rise in a warm place for about 1 hour.
- 18. Check if the dough volume has doubled.
- 19. Lightly dust a work surface with flour.
- 20. Divide the dough into 6 equal portions.
- 21. Shape each portion into a ball.
- 22. Place the dough balls with some distance apart on a flour-dusted baking sheet.
- 23. Cover the balls.
- 24. Let the balls rise in a warm place for about 1 hour.
- 25. Heat frying oil in a pot.
- 26. Test the oil temperature with a wooden spoon handle.
- 27. Wait until bubbles form around the spoon handle.
- 28. Fry the Berliners in batches.
- 29. Fry them for about 2 to 3 minutes from each side.
- 30. Remove the Berliners from the oil when they are golden brown.
- 31. Let the Berliners drain on kitchen paper.
- 32. Dip the top of the warm Berliners in the remaining sugar.
- 33. Let the Berliners cool completely.
- 34. Take a bowl for the jam.
- 35. Stir the strawberry jam until smooth.
- 36. Fill the jam into a piping bag.
- 37. Use a long nozzle for the piping bag.
- 38. Fill the Berliners with the jam.
- 39. Enjoy the Berliners.
