  1. 1. Wash the peaches thoroughly under running water.
  2. 2. Cut a small cross into the skin on the bottom of each peach.
  3. 3. Place the peaches in a bowl and pour boiling water over them.
  4. 4. Let the peaches sit in the hot water for 30 to 60 seconds.
  5. 5. Drain the hot water.
  6. 6. Immediately pour cold water over the peaches to stop the cooking process.
  7. 7. Peel the skin off the peaches.
  8. 8. Cut the peeled peaches into quarters.
  9. 9. Remove the pits from the peach quarters.
  10. 10. Add the fruit flesh, lemon juice, and maple syrup to the mixing container.
  11. 11. Insert the measuring cup into the mixing container.
  12. 12. Puree the mixture using the puree function for 30 seconds.
  13. 13. Divide the puree evenly among six champagne flutes.
  14. 14. Fill the glasses with Prosecco.
  15. 15. Stir the drinks gently.
  16. 16. Serve the cocktails immediately.
