  2. 2. Halve the avocados, remove the pit, and scoop the flesh out of the skin with a spoon. Slice the avocado halves lengthwise into thin pieces. Rinse the spinach thoroughly and dry it in a salad spinner.
  3. 3. Arrange the spinach, salmon slices, and avocado slices evenly on the bread slices. Season with salt and pepper to taste, and serve sprinkled with the roasted pine nuts. Enjoy your meal!
